I made your Sourdough Crumpets yesterday from my Starter that I have had going for a couple of years...the Crumpets were a big success. Oh John this has taken me back. My mum used to do these all the time. Remember the Fray Bentos pies? She used to keep the tins they came in and she would do hers in them. I used to end up washing about 6 of them small tins. I don't eat this but mum sure loved doing them x

Is there a particular temperature the custard needs to hit so one can confirm for sure that it is set? I cooked mine for 45min and it was still rather wobbly. I added 10 more minutes but it didn't get to that stiffer jiggle like yours in the video. I followed the recipe to a T except for the baking dish being a glass tart dish instead of a metal flan one. I used a conventional oven. For a while I have been looking all over on the internet as to whether I could just reuse the beans that I use as weights and I was excited when you mentioned that information in this video. The crust came out perfectly. The trimmed off bits taste just like shortbread biscuits. I was absolutely delighted with the crust because I haven't had it come out as well before but I am sad that my tart didn't turn out as well.
So clad I found your page John you're the best on TH-cam 👏👏 I've been looking for my childrenhood favourite treat my dear nan bought for me back in the 70s, it's the good old fashioned custard slice, I've tried different sites and been very disappointed 😞 can I be cheeky and ask you to help please. I made your Sourdough Crumpets yesterday from my Starter that I have had going for a couple of years...the Crumpets were a big success. This morning I have made your savoury Pastry in the food processor. I normally make it by hand but this way is so much quicker. Its in the fridge ready to make a Beef and Mushroom Pie tomorrow. Oh John this has taken me back. My mum used to do these all the time. Remember the Fray Bentos pies? She used to keep the tins they came in and she would do hers in them. I used to end up washing about 6 of them small tins. I don't eat this but mum sure loved doing them x
My mam used those tins for making Yorkshire puddings in 😂👍😉😃

Is there a particular temperature the custard needs to hit so one can confirm for sure that it is set? I cooked mine for 45min and it was still rather wobbly. I added 10 more minutes but it didn't get to that stiffer jiggle like yours in the video. I followed the recipe to a T except for the baking dish being a glass tart dish instead of a metal flan one. I used a conventional oven.
For a while I have been looking all over on the internet as to whether I could just reuse the beans that I use as weights and I was excited when you mentioned that information in this video. The crust came out perfectly. The trimmed off bits taste just like shortbread biscuits. I was absolutely delighted with the crust because I haven't had it come out as well before but I am sad that my tart didn't turn out as well.

If you used medium rather than large eggs, the custard will not set, there is almost an egg difference between the two.
So clad I found your page John you're the best on TH-cam 👏👏 I've been looking for my childrenhood favourite treat my dear nan bought for me back in the 70s, it's the good old fashioned custard slice, I've tried different sites and been very disappointed 😞 can I be cheeky and ask you to help please. Many thanks.
