I also marvel at the colours of summer, especially the plants that ripen in vibrant colours. Is it a family, of Zucchini? Salt, sugar, rice vinegar and sesame oil are my favourite ways to dress these vegetables as a light appetiser. I slice the zucchini into thin strips with a peeler.
