Just came across chef RDG he really explains everything in great detail. He really knows his stuff. That burger and the fries look fantastic the sause it's just mouth watering.
Don’t look that good to me-he drowned it in mayo and you will have to smash it down to eat it, have mayo all over the place Burger is a steak sandwich with steak sauce, not a Macdonald special sauce with fancy bread

oh man, theres no such thing as "only a burger" a burger is a great food that has been bastardized by fast food industry (including all big brands) and know-it-all weekend grillers and demonized by the health-a-lot whiners. But a burger is more than that. It's more than a recipe, it's more than a technique and more than a just a sandwich. It can be a whole nutritious and healthy food option if you use good quality ingredients and reduce to the minimal the processed or sugary sauces or toppings. You get a very well balance between carbs and proteins and fats (something you can't say about pasta or pizza, foods that I also love btw, I'm not diminishing them) If you remove bread (or change it for another high-protein bread) it can be great for low-carb diets such as keto, south beach, whole30, Dr Sear's zone, etc low-carb diets. And last but not least, a well made burger can be a very tasty and budget-friendly option for a steak. A friend of mine useds to say that a great burger pattie is the poor man's 2" steak, and I think he's right. The grill is a passion, the burger is a passion. This man is just passionate about both of them and it turns out great for all of us (and his customers)

I have watched several of your videos today. It makes me hungry every time. I love the cooking on an oak wood fire. My setup is not near as fancy, but its almost the same. It doesn't take alot. A couple good seasoned oak logs and an over the campfire grill that you could buy from walmart to make the best meats you will ever taste. No need for a fancy grill that costs a thousand dollars.

You’re the best. When I come to Texas, I’ll come see you first. I make a mean burger in whine suspended on Spanish Onion so the meet never touches the pan. Green,red,yellow peppers. Garlic,scotch bonnet,cheddar and Swiss cheese. Cover the pan. So it boils and steams. May God Bless you and family.

I've always been taught that there is a specific order the ingredients go into the burger. The lettuce and tomato with ketchup go on the bottom, followed by the patty, covered in cooked onions and melting cheese. Ketchup is them applied on the top bun and closed. In Australia, we also add bacon and egg, on top of the patty. We call this a Hamburger with the lot, simply amazing. Love the videos congrats.

Nice looking burger, to many people over do the burger. Simplicity with bold flavors and a meat patty to match the bun. Two big thumbs up from me. My thoughts on the burger are that the best burger is the one you make at home to your liking.

Ha! For the sauce, didn’t have the smoked chili puree and I didn’t have the smoked cheddar so I used feta cheese and some Stubbs barbecue sauce and some smoked paprika and the result was pretty darn good. Thanks

Just cooking for the fam. but always looking for that great burger that would blow their minds however I've not been able to find any buns other that the typical seeded/un-seeded white buns at the market. I think the bun would take it from ordinary Monday burger night to WOW Burger Night. 😲😁😉👍

oh man, theres no such thing as "only a burger" a burger is a great food that has been bastardized by fast food industry (including all big brands) and know-it-all weekend grillers and demonized by the health-a-lot whiners.
But a burger is more than that. It's more than a recipe, it's more than a technique and more than a just a sandwich. It can be a whole nutritious and healthy food option if you use good quality ingredients and reduce to the minimal the processed or sugary sauces or toppings. You get a very well balance between carbs and proteins and fats (something you can't say about pasta or pizza, foods that I also love btw, I'm not diminishing them)
If you remove bread (or change it for another high-protein bread) it can be great for low-carb diets such as keto, south beach, whole30, Dr Sear's zone, etc low-carb diets.
And last but not least, a well made burger can be a very tasty and budget-friendly option for a steak. A friend of mine useds to say that a great burger pattie is the poor man's 2" steak, and I think he's right.
The grill is a passion, the burger is a passion. This man is just passionate about both of them and it turns out great for all of us (and his customers)

Robert was born in 1954. He received his B. S. in Chemistry and Biology from the University of San Francisco and his Ph.D. in Biochemistry from the University of California at Riverside in 1980. I have watched several of your videos today. It makes me hungry every time. I love the cooking on an oak wood fire. My setup is not near as fancy, but its almost the same. It doesn't take alot. A couple good seasoned oak logs and an over the campfire grill that you could buy from walmart to make the best meats you will ever taste. No need for a fancy grill that costs a thousand dollars.

You’re the best. When I come to Texas, I’ll come see you first. I make a mean burger in whine suspended on Spanish Onion so the meet never touches the pan. Green,red,yellow peppers. Garlic,scotch bonnet,cheddar and Swiss cheese. Cover the pan. So it boils and steams. May God Bless you and family.

I've always been taught that there is a specific order the ingredients go into the burger. The lettuce and tomato with ketchup go on the bottom, followed by the patty, covered in cooked onions and melting cheese. Ketchup is them applied on the top bun and closed. In Australia, we also add bacon and egg, on top of the patty. We call this a Hamburger with the lot, simply amazing. Love the videos congrats.

Nice looking burger, to many people over do the burger. Simplicity with bold flavors and a meat patty to match the bun. Two big thumbs up from me. My thoughts on the burger are that the best burger is the one you make at home to your liking.

Ha! For the sauce, didn’t have the smoked chili puree and I didn’t have the smoked cheddar so I used feta cheese and some Stubbs barbecue sauce and some smoked paprika and the result was pretty darn good. Thanks

Just cooking for the fam. but always looking for that great burger that would blow their minds however I've not been able to find any buns other that the typical seeded/un-seeded white buns at the market.
I think the bun would take it from ordinary Monday burger night to WOW Burger Night. 😲😁😉👍

Do you mix pork mince with your pattie ?
My wife makes a great pattie, she mixes in pork mince and bread crumbs to keep it moist. plus some Cajun herbs and relish for extra flavour.

Robert Del Grande, one of the celebrated chefs of America, is the executive chef and partner of the renowned Cafe Annie in Houston, TX.
Robert was born in 1954. He received his B. S. in Chemistry and Biology from the University of San Francisco and his Ph.D. in Biochemistry from the University of California at Riverside in 1980. In 1981, while courting Mimi Kinsman (now Mimi Del Grande), Robert ventured to Houston where Mimi was visiting her sister and brother-in-law Candice and Lonnie Schiller.
