    13:13 Summary
I’ve seen a lot of discussion online in the ketogenic circles about the hidden dangers of fruit and honey and I wanted to give my take on these claims. In this video, I share some recent findings on HbA1c and how it actually does measure fructose glycation, the district benefits of fruit and honey, and the downfalls of a long term ketogenic diet.
There have been discussions around this idea that you cannot measure fructose glycation of hemoglobin with any lab test that we have commercially available for humans. However, we see in the research that when you feed mammals excess fructose, both fructose in the blood as well as HbA1c will reflect the increase in fructose intake.
So good news - if you’re eating fruit and honey and you’re worried, just check a HbA1c!
On the idea that fructose is harmful for humans: I believe that whole food sources of fructose are not harmful for humans, and are actually shown to be beneficial. We should not confuse studies looking at pure fructose or high fructose corn syrup with those that include whole food sources (fruit / honey).
Fruit is repeatedly proven to be a benefit for humans, both protecting from oxidative stress and improving endothelial function, improving markers of vascular health and cardiovascular disease long term.
We should also note the hidden dangers of a ketogenic diet - it can increase advanced glycation end products, which was the initial concern about fructose here (and as we saw in the research, fruit actually improves glycation…)
If you can’t tell, I’m a huge advocate for including fruit and honey in the human diet. Carbohydrates are essential for optimal performance, electrolyte maintenance, and hormonal balance. And in my opinion, the absolute best form of carbohydrates you can include in your diet are fruit and honey.
Fruit is the least toxic part of the plant, the part the plants wants you to eat. It’s sweet and colorful. Honey is also very low in toxins and contains vital compounds like nitric oxide precursors.
As stated at the end of the video, I appreciate all the conversations and opinions around this topic and love friendly discussions like this. I hope we can continue this exchange with my good friends in the keto community in order to advance the narrative and give more people the opportunity to achieve optimal health!

That being said, many who start the carnivore diet are trying to heal autoimmune disease/leaky gut and a strict meat elimination diet has to be implemented for a period of time to seal the gut lining first. Does the assay count the fructose in the same way that it does the glucose and with the same sensitivity, or, for example, only when the excess glycation of fructose reaches a certain threshold? And also, are you saying that the lab's statement isn't true? If there's a real true/false here rather than a subtlety, we should understand that. You say that the tests do measure all 3 sugars, and immediately follow with the statement that the numbers rise when excess fructose is consumed, and that could be construed as introducing the subtelty. Can't it be definitively shown in a lab whether the assay measures all 3 sugar glycations accurately ? Not a test data which show responses to a certain load of fructose, but a basic understanding of the chemical mechanism of the test? This test was invented, so what it does must be understood. Somebody has to lose on that argument. @@EL.JEFE1231 There isn't one message to share. It's not just the light environments that matter. Humans have lived in different environments since the dawn of time. That's why Japanese can eat large amounts of rice and remain skinny, and the Innuit can eat large amounts of fat and protein and not get scurvy. Evolution matters. When you live in America, or a melting pot with many different types of climates it's probably best to work out your diet for yourself. Take their words as helpful hints and adjust accordingly. I'm thankful for all of the carnivore/keto community as they all point out the most important issue...stay away from highly processed anything.

@@bradleygermain6288 But that isn’t even the case in this community because you have some saying, if you can’t afford what I am eating, have a hot dog, have this just as long as you are eating meat, you are in the game. So, there isn’t even that familiar with this community. At the very least Vegetarians and vegans have a singular message more often than not.
The other issue is brought up; Paul shares this, but most people come into this thinking, "Oh, ok, I will just eat that; months later, they find someone else doing something different and then switch to that because they don't know what the complete message is and why they are doing only that they are feeling better. The consistency in the message needs to be more helpful because whether we want to say it or not, people like Paul, Dr. Cywes, and Ken Berry all influencers on this subject, so most people become very closed off to adaptations once they say do this, people tend to follow.
Now if they all came out and said this is an animal-based diet, and this is what you should do, but the vital thing to understand and do is, test what works, test it out, and see what works best for you and your body. If all meat is working, stick with it, but if you have XYZ, add certain veg to your diet, or at more raw milk to your diet.
I personally love honey.. it's the one thing I refuse to give up, and I have 1, maybe 2 tablespoons full of raw unfiltered, or I eat it with the comb a week, and I workout like crazy.

I often wonder what we would eat if we had no supermarkets and were completely dependent on foods that we produced ourselves. I suspect vegetarians and vegans would ceast to exist- over consumption would ceast to exist, and all these fantastically ingenious mixtures of ingredients within one meal would also fail to exist. This tells us something about how humans have adapted to live and eat.

We'd eat seasonally (what's available at the time), and we'd also resort to traditional preservation methods (canning, drying, pickling). We'd be less precious about meat consumption (i.e., far less emotions-based veganism). Interesting to consider.

Charlie, I am a T1 and I adhere to a strict Carnivore Lifestyle. Paul doesn’t address T1’s like us, so keep in mind that his experience and advice is for those who are Not T1’s. He is very fortunate to have a great working metabolism, as well as not having any challenges pertaining to diabetes. Fruit and honey will increase T1 diabetics glucose levels. The only way to receive the healing properties of high quality honey is to have a very small dab of it (dip the handle side of a teaspoon) throughout the day. Just keep in mind that the sweetness (of anything) can “possibly” trigger your craving for carbs. The craving doesn’t happen to everyone, so you will have to experiment and document your own personal experience to see. I will say that I personally have always had great will power and would on occasion (ie. bday parties) would have one tablespoon of cake just to partake, and could keep it at that one tablespoon and not have more. Good luck on your journey.

A carnivore diet (eating only animal foods) isn't about any particular kind of macro nutrient ratio. It's about eliminating all but the least inflammatory foods (which are animal foods).
You can still eat honey if you want sugar, which is an animal food and which almost no one is intolerant of. If you're lactose tolerant, you can also get sugar from milk.
If you're not eating grains, seeds, etc, then you're still getting the benefits of the elimination diet, which is to avoid inflammatory foods.
Also, after you've solved your problems (diabetes, auto immune disorders, etc) eating only animal foods, you can introduce one plant food at a time and see what happens, like berries or apples.

This is a very common thing so many people that are on dieting and exercise routines and who don't end up losing fat and/or getting a six pack back will complain about. I wish the videos of these subjects separated the discussion of harmful versus optimal and also accounted for age and health. My grandparents ate everything in moderation fruits, carbs, meats, veggies, sweets, and lived to 96 years old without ever being fat, ever being on a diet, having any metabolic disease etc. So unless we assume they would have lived to their 100s otherwise, none of the food was very harmful to them even if maybe not optimum. They also never exercised but also did not drink coffee nor alcohol.
My medical history has been very different because I am not very good at moderation and so I overeat sweets and carbs and food in general and have been fat multiple times in my life. So I assume what is healthy for me and sustainable is not the same as my grandparents.
Also, eating local fruits in costa rica will be very different than what I buy in my local supermarket.
Where you live makes a big difference. For example if I eat in US restaurants a few times a week, the food makes me gain weight quickly. Yes when I go to Europe and eat 3 meals a day in restaurants for 2 weeks, ordering similar food, I maintain my weight. The quality of food and how it is cooked makes a difference because I am no more active in Europe than here. My point is again, fruit and fruit may not be the same and healthy very active 45 year old may have very different experience than a woman in 50s who is a lot less healthy and active.

Research on human gene says that our life expectancy on average is 120 years old. That means if you do everything as you should by nature, and if there's no freaky accident to kill you short, you would be able to live up to 120 years old ON AVERAGE. That means you could theoretically live a lot longer than 120. So based on that, your grandparents lived 24 years short of the average span. In the context of longevity, anything that isn't optimum can be considered harmful, considering even if the foodstuff doesn't cause any acute truly noticeable symptom, it still cuts your lifespan short.
