    I love ham and beans! Thanks for sharing your canning technique! My grandma served them with cornbread and mashed potatoes and we had carrot and celery sticks on the side. Yum. Unfortunately my husband isn't a fan, but I still have them occasionally when we eat at the "Corner Cafe" in Independence ;-)

      We always have cornbread with them too. A perfect meal for a cold day!

    I used ham hocks and boiled them for an hour or so, and removed the fat. Can I use that broth along with water to cover the beans?

    Thanks, Laura, sounds like an easy recipe. Do you think it would matter if I used chopped sliced bacon instead of ham? How would you use these beans in a meal?

      You could definitely use bacon instead of ham. You wouldn't need to make any changes to the recipe, just swap in the bacon. I usually make some corn bread to go with the ham and beans and call it a meal. Maybe a salad, too, if it's dinner. Take care!

    Do you reuse your lids? I've spoke with several people and said uou could. What do you think?

      You run the risk of false seals and other sealing issues. Would not recommend reusing lids when canning. I would however, reuse when putting things in jars for unsealed items, like dry goods, things I'm storing in the fridge temporarily, or as my grandpa did, storing small tools, nails, and screws.

      Sorry so late to reply! What Jamye said is exactly true. I save my used lids and use them for containers for left overs or dry goods, too. There are re-usable lids you can by from a company called "tattler", but I've never tried them (they are significantly more expensive)

      I let it simmer a couple of hours to get the beans nice and tender and the salty ham flavor throughout

    I am having issues with beans being too soft. Would you provide amount of beans and water?

      Ball book of canning recommends filling jar 3/4 full with the beans then topping off with liquid. Hope that helps !

    I know a woman that actually cans using the oven rather than a water bath... has any of your followers tried it that way? PS love your channel

      Great question! Some people really believe in dry canning and can for years and years with no bad results. I'm not comfortable with it personally. Dry heat does not work/penetrate the contents of the jar the same as the wet heat from water/steam, and I am not convinced the final product would be safe.

    When chopping multiple small veg like carrots and celery. Clean and prep all the veg first then you can slice into pieces by putting multiple ribs of celery or carrots side by side or stacked and cut multiples at once. Your wrists and fingers will thank you later in life.
