Cocoa is really a great fluid repellent. If you ever tried to mix cocoa and cold milk you would know. The first i think was powdered sugar or Confectioners' sugar
For anyone wondering what’s going on with the chocolate sauce, cocoa power is hydrophobic so it won’t stick to the powder and instead of the sauce sinking into the powder it just rolls off because of it- kinda like how the curve of an umbrella makes the water roll off because it’s waterproof, if you want to see it for yourself take a spoonful of cocoa powder/hot chocolate power and dip it into liquid before taking the spoon back out, poke it with a toothpick and all the wet power should just roll off. I hope this explained it alright- sorry about bad grammar as well 😅
The first part is from a Japanese store called りくろーおじさん (Rikuro Ojisan). It’s a chain found in Kansai. The twerk cakes are not Castella cakes but cheesecakes. At least at my store they give out free cake samples every hour so I’m there almost every day🤤

The coco powder is used to bind to the sauce so it drips off, well technically rolls off. The surface area of the power is so fine it can forfill the water surface tension allowing it to move like that, unless further mixed.

So, I'm pretty confident that the first one is a kind of cake popular in Japan called a Castella Cake. Those are usually rectangular in shape, but everything about the crumb consistency of it looks like Castella.
Japanese jiggly cheesecake is SOOOO good, especially if you want a light snack that’s not TOO much or overly sweet (deposit you put in it obviously). There’s a place called Uncle Tetsu, that’s the only place here in the states I’ve been able to find it & the chocolate syrup, along with the other things being drizzled aren’t sticking because of the match or cocoa powder on top
They are all Japanese versions of fluffy pancakes and Japanese cheesecake
