In the books, the Night's Watch is a lot grimmer than the tv series. Characters like Thoren Smallwood and Jaremy Rykker consider the Free Folk little more than animals and many other rangers are quite aggressive towards them. Hell, Mance Rayder was "recruited" after his mother was assaulted by rangers and her family massacred, so i can totally see the Night's Watch of old making retaliatory strikes and raiding parties like Bannerlord. Nowadays may be more difficult with the chronic lack of manpower.
Its implied to really be up to the Lord commander, with different villages and tribes having there own relationship with the watch. as pointed out due to the lack of manpower the nights watch just isnt able to project power like that
Arron scheming to abandon his brothers of the Watch and make an escape, only to distinguish himself in combat, earn the respect of his fellow men and his commanders, and deciding to stay out of a newfound sense of kinship and duty is honestly a really cool story arc lol

Well to be fair he plays a lot of sandbox, tell your own story games that are all time sinks which sadly goes against wanting variety gaming. In fact most of the sandbox games like Kenshi and Bannerlord, etc, we all play them this way, which is you have a good idea/concept of a story, play through it and sometimes you lose interest and move on, and I think this happens with Simo more often because he showcases more than one game. This also is affected by audience, it's like some people like long term DnD campaign, while others prefer short one shots because they don't have the time to keep up with long term storytelling and references. Still, I think at the very least we can all appreciate him being consistent with his uploads on top of his streams while still uploading continuation of series on his second channel, which people don't know about.

Regarding whether the Night's Watch 'ranged' north of the wall, that was the entire duty of the Ranger corps of the NW. Builders and Stewards ensured the wall was provisioned and well trained, while the Ranger's duty was to clear out enemies to the North and keep bands of free folk from forming armies. Also the ancient duty of defending against the Others.
You should have named him Eren, not to be confused with Eren Yeager from the famous manga and anime series Attack on Titans. Just Eren... Not like he lives near a wall protecting people from unknown threats or anything 🫣🫣🫣

I have no idea any IP's that do modding support for their games on console besides bethesda, but It doesn't seem very likely tbh albeit a man can hope
