I've made this salad and eaten it restaurants many times. Last week I had this salad last in a Chinese restaurant and they didn't smash it. I quickly realised that the reason for smashing it isn't only for the flavour to absorb into the cucumber better, but also so that one can grab it with chopsticks better. It was impossible without smashed edges!
This is one of my favorite sides to eat during summer. I'm going to keep this recipe in mind when the nearby farm stand opens up. They always have amazing cucumbers that I can't get the same at any grocery store. I do have a really good Chinese black vinegar at home; I have found though that balsamic is a little closer in flavor, or if someone has both, maybe a 50/50 balsamic-apple cider blend. Black vinegar has a great flavor, and given that it has a near indefinite shelf life I would certainly encourage folks to get their hands on some, but not pass on this recipe if not!
My favorite Chef for Chinese food recipes. She always looks as great as her dishes. Thanks for another great tip. Crushing cucumbers, who would have thought of that.
This is so good. I used a Hot Sesame Oil I got at Oriental Market because that's what I had on hand, and it was not blazing hot. I also used a rice vinegar. I've ordered some black vinegar to try next. The salad was delicious. Thank you for this recipe!

I also made your shrimp and broccoli so good. I had a carbon steel wok that I used several times but everything stuck to the pan. I followed your steps and wow amazing non stick. thanks for doing your channel and I'm so glad I found it.
I get food boxes from the local community garden and they always give a huge amount of certain veggies. Right now I have TEN cucumbers😮 we can only have so many sandwiches 😂 this looks delicious and I can easily use 3 or 4 for a family meal side🎉 Thanks, girl!❤

So sorry re your allergies but I after years of munching Chillies had anaphylaxis to them a couple of weeks ago so now, any Chilli, Paprika, Chyenne Pepper etc out It is, really challenging to find safe alternative as for eating out what a nightmare when all you get told is seasonings been added. I do not know about you but folk think it is just a choice I do not like heat not a, real allergic reaction

Also a good substitute for zhenjiang black vinegar is balsamic vinegar. They are kind of similar in character and taste. Great recipe Mandy.

Dont throw away the liquid. I mixed salmon with the dressing.
