In my opinion, the plasma is just a medium for the particles (gravitons, i guess, they are hypothetical, though). The beam causes damage when ordinary matter is saturated with it. The range of the particle cannon is determined by focal point of the beam. Graviton Surge is actually a black hole, that is forming when a big clump of gravitons meets dense matter. This small black hole only lives for a short time due to Hawking radiation, its size is just an optical illusion. So my vote is for 6000 °C.
I said its size is just an optical illusion because according to the Overwatch wiki, the radius of the Graviton Surge projectile is 0.2m or 200mm, but the Schwarzschild radius of the Earth is only 8.87mm. This means that a black hole with a radius of 200mm would have to be 22.55 times heavier than the Earth itself, which would be impossible. But we can assume that the actual size of the projectile is much smaller and it's just an optical illusion due to the gravitational lens effect and the warping of the air around it.
so my personal head canon was that the beam is the Accretion disk of the black hole in the muddle of the gun. using insanely powerful magnets (which would be crazy heavy/dense ) it would also allow her to manipulate the field to absorb and redirect it into the black hole. Her bubbles aren't destroying what's she's shot with. its using it as like a catalyst. increasing its its size and the accretion disk and therefore her dmg.
You forgot that the concrete barrier is not just experiencing heat from the beam, but also radiating itself and having convective heat transfer with the surrounding atmosphere. This means that energy required is even bigger, thus the beam even hotter.

What about breaking metal railings? What was the point of calculating a rate of heating if you were going to assume that the heat was constant and there was no change in heat?
In the lore, the moon has no atmosphere. But in gameplay, all characters are capable of exiting Horizon Lunar Horizon and traversing the lunar surface without taking damage over time or just plain dying from suffocation. Thus, using a gameplay quirk (Zarya being able to go outside on the moon and shoot her beam) to inform that her particle canon cannot be shooting particles is just bad logic. Using the same logic, if characters are outside on the moon with no space suits for life support, all characters must be capable of breathing on the moon/it must have an atmosphere. We know this isn't true. Gameplay logic ≠ Lore logic In the same vein‚ literally every single character can one-punch break all railings of all different compositions in-game. Using that piece of gameplay (shattering concrete railings) to then decide the power of Zarya's beam is just bad logic, because by that logic characters like 62 year old Ana Amari and 19 year old Hana Seong (outside her MEKA suit) are punching concrete railings with enough force that they shatter exactly the same way with at least the same power as one tick of Zarya's beam. But we know that in the lore, no one outside Doomfist is punching with the kind of power Zarya's particle cannon is outputting. Also, concrete typically only contains between 2.5 - 6% water by weight. To instantly shatter the concrete from flash boiling all water within it, you would have to instantly bring the entire slab/railing to that temperature. We see in the cinematics that not even the larger Mech Suit or Null Sector versions of her cannon can do that (it instantly slices through metal with pinpoint accuracy in Infiltration and through asphalt with pinpoint accuracy in the Zero Hour cinematic). And regardless of if her beam was particle or plasma in nature, heat distribution would occur at the point of impact and then radiate outward. At temperatures of 2 million degrees celsius, it would sooner punch a hole straight through the concrete at the point of contact (like in lore) than saturate the entire slab with heat and explode it, evidenced by how the more powerful variants of her cannon function in Overwatch canon). And even if Zarya's beam manages to instantly and with 1:1 efficiency transfer all of its heat into all of the concrete at once, the concrete exploding depends entirely on the percentage of water content within the concrete. Using the concrete as the starting point for energy calculations was not the right move, but the video was fun nonetheless
Illari's healing beam also insta explodes any concrete railing the same way zarya's weapon does. Does that mean that Illari's beam is as strong as Zarya's beam and so it has the same temperature? And somehow one heals you while the other melts you?

This reminded me of an ooold video from like 2016 by shoddycast in which he calculated the kinetic energy of the beam by seing how it moves the gold bars in Dorado defenders spawn (assuming they weight the same as an IRL gold bar), which also led him to the conclusion that it is heat based, as it didn't have a lot of kinetic energy. He then calculated the kinetic energy to heat conversion from Zarya Blocking damage, but If I remember correctly didn't land on a specific temperature either. Anyway, great video.

For the laser, a rough summary: Particles from cannon need to collide with air molecules to form the plasma, thus need energy and heat. Suspose we got unlimited energy from a magical charge port, we fired up the gun, make the particle "excited" and collide with air molecules, which form the "lazer". So, ta-da, a cannon that heating air particles to a plasma column and shooting pseudo blackholes.

I think the beam is blueish purple. Often times in those sorts of artstyles you have to use a white middle to better portray something is glowing bright.
I was with him still he brought up concrete. Like The color is a good place to start since White and purple are very high temps. But the concrete explodes from anything, pretty sure bastion's bird could break it.

I think the beam is blueish purple. Often times in those sorts of artstyles you have to use a white middle to better portray something is glowing bright.
I was with him still he brought up concrete. Like The color is a good place to start since White and purple are very high temps.
But the concrete explodes from anything, pretty sure bastion's bird could break it.
