    I'm loving your channel and learning. Does the wheat type determine the protein amount? Such as hard wheat and soft wheat?

      Well, there are many factors which are influencing the amount of protein of wheat.
      There are several kinds of wheat, far more as only soft and hard wheat. Other factors are the ground, where the wheat grows, the amount ot fertilizer which is used, the wheater, the temperature, the amount of water the wheat gets while growing and so on.
      You can see, it is often not that easy with the protein. Bigger mills normally are able to guarantee always the same quality of their flour as they mix different wheats together to get what they want to have and what they want to guarantee.
