Another great cook! Made similar last fall. We used honey also, good choice. Instead of "bacon" we used sliced belly/fresh side so my smoke (not off the shelf flavor) was at the front, apple & maple combo. This way we had more control of salty, savory, sweet & heat.

I wrap the first piece of bacon around the ends before the traditional bacon wrap to hold in the cheese. Also, an hour in the fridge before putting them on the smoker would help with it leaking out.
I will definitely be making these soon. I do like to add herbed goat cheese in with the cream cheese on most poppers. Love the chicken thigh addition, and the tip on using Mexican spicing! Chipotle & adobo marinade???

I'm definitely gonna have to try that. But I think stuffing the jalapeños from the top and smoking them upright will keep more cream cheese from oozing out.
Next time try wrapping them with a piece of bacon end to end with the first piece. Then go around the chicken bombs. That will help hold the cheese in. You still may get some leakage but it will be less. Also, here’s a tip for trimming the fat off chicken thighs; use your kitchen shears. I forget who showed me that trick but it’s much easier than using a knife on a slippery thigh.

I just watched your pork chop video and now watched this video. What would this recipe be like if you pounded out a thin pork chop and wrapped the stuffed jalepeno instead of chicken???
I am only guessing...I dont think it would work...heres why...as mentioned in the pork video...temp is everything...a thigh compared to a chop is night and day different...you would only cook the pork to around 140 ish and have carry over cooking...as the thigh can be over cooked and still juicy because all the fat in the thighs...this also allowed the bacon to render and crisp up...
it had rained here for the last 2 1/2 days. i shaved my head a few days ago and it is freakin cold. Chicken fat is nasty and the thighs seem to be the fattiest part of the chicken.
