I have made flour tortillas since I was 12 years old (54 years ago), but these are by far the best I’ve ever made. I’m new to sourdough and now so excited to make these. Thanks so much! God bless you and your channel!
Thank you. I got a recipe ingredients only from my daughter's friend's Mexican mother in America when we moved to Australia. Australian totillas then were bland, and my homemade tortillas were good, but I didn't have all your steps. I'm into sourdough now and am excited to try your methods.
I have made these tortillas over 5 times now. They are delicious ! Definitely my new go to tortilla recipe. I’ve tried handfuls of other homemade tortilla recipes, with and without sourdough starter, and these are by far the best thank you so much for the recipe.
Thank you for this vid, it's exactly what I was looking for! As someone who has Mexican background I've been looking to make a healthier version of Nana's flour tortillas😂 but satisfying enough to please the palett.I just started venturing into sourdough starters, which i have no experience with. So glad I found your channel, looking forward to making the for the familia!❤
Thank you! Enjoy the recipe and please be aware that there is a mistake on the quantity of buttermilk check the description of the video for the updated recipe.
Made these today and this is now my go to fresh tortilla recipe. The recipe is awesome and the roll out and cooking directions were very easy to follow! Just saw there was a mistake in the amount of buttermilk after I finished making them. I just kept adding little bits of flour and folding the dough until it was still very hydrated but I able to work with the soft dough. Made for a very soft end product that tasted amazing.
SO GOOD! i made them with the video and just added lots more flour and they still turned out great 👍 i saw the recipe later and I'll try it that way next
What a wonderful recipe especially because it’s made of sourdough for thats my preferred bread loving your tortilla recipe I can’t wait to try this, brings back memories of waking up early to the smell of flour tortillas and of course I was part of making them since the age of eight thanks for the wonderful recipe

Thank you Daniel, made these today and turned out perfect! Don’t worry about the 200g buttermilk mistake, it was even better because I have ended up just doubling the recipe for the rest of the ingredients - even better as I have more tortillas now 😅 ☺️👍

I lived in New Mexico and miss the fresh, hot tortillas from the Albuquerque Factory with Carne Adovado (pork in red chile sauce). This is the perfect recipe. From one Daniel to another, Muchisimos Gracias! By the way, I love your channel!
My gosh, Daniel! Those are the best flour tortillas I have ever made. So pleasant to work with, and rollable to a paper-like thinness. With all other recipes I have struggled because the dough was not flexible enough and would bounce back and stay one milimetre thick and then harden on the pan into this solid pale thing that would crack when you try to roll a burrito. This one is the opposite and looks perfectly like a cow. I have just had a flashback twenty years back to this cantina in Florida that served sth exactly like that. Thank youuuuuuuu!
Thank you so much for all your recipes. I made these tortillas and they were perfect 😋👌🏻And spelt bolillos with sesame seeds are one of my favorites ☺️👍🏻
Wow amazing! This time i am making 4x the amount. Is it possible to roll it out into wax paper and keep in fridge and when i want one just cook it? Or do i have to make them all?
You're awesome thank you for this recipe! I love my starter and it feels wrong buying tortillas at the grocery store now since I know I could just make my own 🤣😅
After you cook them yes they can. Thank you! Enjoy the recipe and please be aware that there is a mistake on the quantity of buttermilk check the description of the video for the updated recipe.
I can’t wait to try these! Thank you for the recipe. I’ve made flour tortillas for years and want to try yours. I’ve not heard of making it with buttermilk. Just curious, what does the buttermilk do and if I left it out would it change the outcome? Thank you for your time!

Hi Daniel, I'm excited to make the green avocado green salsa sauce. Unfortunately in Singapore, I have never seen green tomatoes. Can I substitute orange/green tomatoes? Can the tortilla be baked? If so, what's the oven celsius and how many minutes? Thank you so much.
The tortilla can’t be bake other wise it would be more like a pita bread, you can substitute the tomatillos with any tomatoes but you won’t get the same result
@@AKneadtoBake Thank you for your prompt reply. You are a very polite man. I will still try to make the salsa. It looks so yummy. I have baked a lot of breads and have followed your instructions accordingly. All turned out so delicious. Thank you teacher! Have a blessed day and stay safe!

Love this recipe. But somehow I needed to add about 150 gr more flour or so. Used Half whole wheat flour and half un bleached white. Ended up with 12 tortillas instead of 6.😊 Happy.
Yes I’m glad it worked for you! There was a mistake on the flour content. I corrected the mistake on the written recipe in the website. Here is the link www.akneadtobake.com/post/sourdough-flour-tortillas
Do they stay soft? That it’s the problem I always encounter when I’ve tried making flour tortillas. They come out perfect but they get hard as soon as they cool down. I would like to try these and see but please let me know.
Oh no, I started making these by watching the video and in the middle. I read your note that said that you made a mistake and that the buttermilk was half the amount. I’m adding a little more sourdough starter and a little more flour. I hope this comes out good next time, I’ll do the less
A tortilla press works well with corn tortillas because corn is gluten free... due to the gluten and how the gluten makes the dough expand you need a roller pin unless you have a commercial grade hot press to press flour tortillas
You need to try this , very good , and if you leave it overnight the dough ball in the fridge and then let it go to room temperature the next day a will be better
Has anyone tried freezing these? I know it's better fresh, but I want to make some ahead of time to keep home cooked food in the freezer with no weird ingredients.
Haha now I see there was a mismatch between the audio and subtitles as regards the buttermilk quantity :) I totally missed that but luckily followed the subtitles and avoided a sticky situation.
I watched the video and followed all the instructions. After the dough was formed and I saw that it’s too wet and added a little more flour. Now that I read your written instructions, I see that the buttermilk amount should be 100 g only!
Yes I’m sorry, that was my mistake, I’m very sorry. I can’t change the audio in the video, I did changed it on the description of the video and the recipe on my website. I’m sorry
Dang, I made the recipe and the dough was way too wet, I had to add about 55G of flour to get it to a point where I could work with it at all. I have made tortillas hundreds of times before so I should have known aiso there are a couple of other conversion problems (1/8 cup of oil, not enough) why not just give all of the measurements in grams? I see now that you changed the recipe in the intro, they came out ok after a few tweeks.

Looks great! Do you have any tips / advice for adjusting this recipe for long(er) fermentation? Due to IBS long fermentation is essential for my son.
Yes you can place the dough in the fridge to ferment at least overnight

Makes the tortillas softer and improves the texture but if you don’t use it it doesn’t really change the outcome or the flavor much

Yes but I don’t see why since you are only making tortillas
So easier to digest. Thank you!
I'm new here these look amazing. I will be making them very soon. Do they freeze well?
Yes they do! Enjoy!
Can you freeze these? If so, should I cook then freeze or just make the dough balls then freeze? thanks
Yes Please- corn tortillas!!
Ok!
Can we ferment it further after mixing in the flour etc?
Yes
How hot is hot roughly? Like ... smoking slightly? And also ... no oil on the pan at all? Very excited to try this :-)
No oil and not smoke but hot, lol
Thank you for this great recipe; just a quick question about leftover tortillas. How would you store them?
In a plastic bag in the fridge

Can i use water inwtead of buttermilk?
Yes you can! Thank you! Enjoy the recipe and please be aware that there is a mistake on the quantity of buttermilk check the description of the video for the updated recipe.
What about using a press, would that work?
It would have to be a heated press not a regular tortilla press
Can you use tortilla press?
Not on these tortillas only if you have a special heated press for flour tortillas

SO WHAT IS YOUR GREEN SALSA RECIPE? :)
Here it is
www.akneadtobake.com/post/avocado-green-sauce
I made these tortillas but they are not soft. I followed your recipe to the t. What could have happened?
As in they are not pliable? If they are not pliable and hard it could be because they are overcooked. They tortillas are ready once they puff up
👍❤️🌹
Enjoy!

Almost like pita bread. It puff.
Yes but pita bread is much more thick, tortillas are almost transparent
Cooked them too hot. Will try again at lower temp and a longer ferment time for more gluten development and flavor :-)
