I can think one way to introduce this thing. Party is going after an terrible necromancer and after fighting through his minion and monsters, they finally reach his castle. However, they only find the castle in ruin and signs seem to point out that something has broken out from necromancer's laboratory....
I don't know how I feel about the fact that a zombiefied giant head is more formidable then actual giants. But if I suspend my disbelieve, I gotta admit this would be an amazing, dynamic encounter to run

It is hilarious. If it helps, I like to compare it to how much stronger a deathknight is compared to a knight, or a flameskull to a guard.
