Other than the container size that is hilariously similar to how many fish fry are raised, I'm very familiar with tannins considering I primarily dabble in south American fish.
I would like to try dart frogs at some point, I do know a good bit about terrariums since planted aquaria Segway into that surprisingly easy. A large number of common emersed aquarium plants make great terrarium plants since they can generally handle the humidity and lower ventilation. I just dont have experience keeping animals in terrariums or fruit flies, my only terrestrial species kept with plants is a tiger salamander with emersed java fern, java moss, and a marsilea sp.

Yes, oak leaves work. alder cones are also a tannin powerhouse. Indian almond leaves also get eaten by the tadpoles, oak leaves tend to get ignored food wise.
