    Hands down the best video on royal icing consistencies. I’ve seen other TH-camrs say you’ll “figure out” the consistencies as you go along, but that is very ambiguous for a newcomer. Thank you for the time and effort you put into this.

    This is the BEST video! I have watched so many tutorials on getting the right consistency for royal icing and most of them were not specific enough -- yours is the best I have found. I really like how you showed what each consistency looked like on the spatula...dare I say, foolproof?? Thank you so much!!

      awww thank you so much Sherrie, that is the best compliment i get today! 😘 So pleased that you find it useful, that is the only way I can gauge that I have the consistency while I'm preparing my royal icing in different consistencies, and of course i specially love my mini spatula that I cannot do without to mix my icing 😉👍💖

    Wow! You nailed it! No BS, no hesitation, just the simple facts, and how to achieve the optimum result. So easy to follow and understand!     Thank you! I’ve tried for years to get this right. I’ve followed other online instructions that just haven’t worked for me. Even though my icing is a little different (no eggs, no powder, just confectioner’s sugar, milk, almond extract and a tiny dash of Karo to harden up the icing after it’s on the cookie) all of this still applies.

    I came back to watch this again, and I am a bit confused about the difference between "medium" and "flooding". It looks like they were both for flooding. Can you clear this up for me? Thank you!

      Hi Deb, both "medium" and "flood" consistencies are to fill the cookie however the medium consistency is thicker so it stays on the cookie without going over the edges if you want to use one consistency to outline and fill the cookie. Flooding consistency is thinner and you need to use outline consistency around the edges of the cookie to prevent the flood icing to go over the sides of your cookies. I hope that helps 😉💖

    Can you make a video of you decorating a cookie while explaining what consistency of icing you’re using for that spot, just to get a better idea because sometimes I still mess up on what icing to use for what I’m trying to do

      Hi Tamara, in my decorating videos i always explain which specific consistency icing I use, so maybe go over a few of my cookie decorating videos to get an idea on when to use medium consistencies or when to use both outline & flood consistencies. Dont give up tho, you will get better at recognising which consistencies to use over time....and my mistakes are what takes me here, I learn a lot from them 😉🙌💕

    If it has softer than it’s needed and I add more confectioner sugar, will the color change?

      Hi Maria, adding confectioner sugar to make the icing consistency thicker/stiffer will not change the colour...unless if you add LOTS of it 😁👍

    so when they open the OZ to NZ travel bubble, can you please arrange a class, I just love your work and as I cannot seem to get the hang of consistencies... I want a personal one on one lesson.       Yes I certainly did, I'm a self taught baker and I learned everything from watching TH-cam tutorials when first started and then just a gazzilion practices, I learned lots from my mistakes along the way 😁😍

    I’m a novice and am confused by the difference between the Medium consistency and Flood consistency. Not confused by the consistency part but what it is different about what they are each used for. By the photos, it seemed that they were both used for flooding yet were two different consistencies. Can someone help pretty please?

    I love to watch. I tried to make Christmas cookies and got so flustered. 50,000 different colours of icing for trees and Santa and the it wasn't hardening, it was an ordeal

      Hi Doris, my icing recipe is using egg white and not merintgue powder. If you want to make royal icing with meringue powder I would highly recommend using Sweetopia royal icing recipe which specifically formulated to use meringue powder. you can find her recipe here: sweetopia.net/2012/01/royal-icing-recipe-free-illustrated-recipe/ Hope that helps
