  • There are so many royal icing consistencies it's hard to know how to make them AND what to use them for. Ever wonder when to use each of my 5 main consistencies? Well here is a compilation of them all!
**Note: you can use a medium peak instead for a lot of the stiff peak applications in the video! (that's what I tend to do these days)
Full step-by-step video on how to make these consistencies: • Step-by-Step Instructi...
My 5 main consistencies from thickest to thinnest are:
    PIPING:
    1. Stiff peak piping (flowers)
    2. Medium peak piping (outline, detail piping that needs to maintain texture)
    3. Soft peak piping (outline, lettering, detail, line work)
    FLOOD:
    4. Thick flood (one consistency outline/flood)
--- plus: extra thick flood (minis)
    5. Thin flood (two consistency outline/flood)
--- plus: extra thin flood (for lots of wet on wet technique)
    Time stamps for the video:

This video is so very helpful! To have the visuals that you provided where you see just how the icing should LOOK versus just saying how many seconds is much appreciated! Thanks, Grace❤

This is wonderful! It's just the help I've been looking for. I am new to this but very passionate about learning all I can. I have watched hours of videos (who knew watching cookie decorating could be so relaxing?!?) and yours are the best.

How do you get glossy icing? Mine usually comes out dull or chalky.

Air movement helps it dry glossier so a fan or a dehydrator. Also, don't put them inside a lidded container until the icing is fully dry. Hope that helps!
