This episode is important in setting down what demons are in this world vs how they are used in others. They are predators and we are their prey. And note that it wasn't just Frieren saying this. The demons basically tell us that is what they are!!
This demon concept is interesting, but fairly simple. Think of them as a natural predator to humans. There really isn't evil or good involved, it's just their nature.
Demons are thinking creatures that prey on other thinking creatures. There may be no malice or hatred to it but it's still evil. It's like if a psychopath kills someone they don't particularly care about because it's convenient it's still evil.
Some don't quite get it, as you have to understand Japanese language (what little I know I picked up from manga). But Fern speaks very formally, basically referring to Frieren as "Mistress Frieren" and is formal with Stark (hence the "Mr Stark"). He's saying that since they are about the same age she should refer to him in a less formal way as would students of the same grade might. Instead she becomes LESS formal ordering him around.... If you read up on Japanese honorifics you'll understand this better. It doesn't QUITE translate that well.
