    I really like this recepy! Here in Sicily we let anchovies cook for a night in a mixture of white vinegar and lemon juice. In the morning we dry them a little bit and serve with oil, salt, pepper and parsley.

    Love it!!! This is one of my favorite meze. I’m non-Greek and my wife is from Lesvos. Every summer, I can’t wait to visit and eat gavros marinatos with a nice glass of ouzo. And of course parea. One of the many great dishes in Greece! Thank you for sharing.

    When I lived in Southern Italy I used to eat a similar dish called Alici marinati. This flavorful fish is so delicious. I also loved it fried with fresh mint added at the end. It was soooooo good with fresh bread and wine. I'm going to have to make this recipe. Perfect for summer. ☺

      multimedia PcUser so true I see this in the recipes Akis prepares. Unfortunately, I never made it to Greece to visit yet. Definitely, on my list of places to enjoy the food and fascinating culture.

      You can see that when you will visit other places apart from tourist attractions and when you will be meeting local people.
      You can travel to any place easy ! You know very well how to do that, It's on your blood ! Just make this recipe and share it with good friends with ouzo or sambuca. Sharing it's the heart of this recipe!

      Trauma just means damage or wound. So what he is saying is to not destroy the fish skin. In English Trauma generally refers to psychological trauma
      , though not always - especially in medicine it can also refer to physical damage/wounds to the body.

    This recipe makes me so happy. I've been looking for this kind of video for a long time. You can tell it's full of sunshine and flavour. Thank you Akis.
    By the way, I'll be spending a few days in Thessaloniki this summer. Any recommendations ? Restaurants ? Dishes to try there ?

    Looks delicious, will definitely try to make it soon. I just wander whether the 30-minute curing/cooking of the anchovies in roch salt is absolutely necessary. Considering the 12-hour marinating in strong-tasting ingredients such as olive oil, chilis and garlic, isn't salting unnecessary? Or does it have something to do with hygiene or food safety?

      Lior Keinan - the salting cures the fish, anchovies go off very quickly. If they were put directly into the oil and vinegar mixture they still may well go off or have a much shorter shelf life. Also the salting firms up the flesh and adds flavour of its own. If I could get hold of fresh anchovies I would like to try this dish.

    I would have this as a dessert but never made by myself. I am a greedy gourme and I have a bad experience with this fish. I bought 5 Kg of it and marinated. You can imagine, I almost kill myself.

    Why all the negativity around sunflower oil? It’s legit one of the best oils out there.
    You can use it for dressing salads and you can use it for cooking. No negative after taste or to strong smell at all.

      Both have specific advantages, though one key difference is that sunflower oil does not offer any minerals as it is plant based. Olive oil, being fruit based, offers (low) amounts of Iron, Potassium, Sodium and Calcium. Sunfower oil is based on Linoleic Acid (Omega 3, increasing the good kind of cholesterol), while olive oil contains mostly Oleic Acid which helps against cancer (and it also has a little Linoleic Acid).
