  • I hate losing my harvest because I am unable to preserve or consume it fast enough. Here is a way to make sure you get the most from your greens harvest. This video shows you how to make your salad greens last a month or more in the refrigerator.

That 1870's Homestead I just purchased these through the link 😊. My mother in law has been doing this for years. My problem with this has always been the chemicals in traditional paper towels touching my organic greens - so a huge thanks for turning me on to these.

These are rayon. Viscose rayon, a fiber made by dissolving the cellulose in the bamboo, and then extruding it to form fibres. This process removes the natural characteristics of bamboo fibre, rendering it identical to rayon from other cellulose sources.
When bamboo has been chemically processed into rayon and similar fabrics, there's no trace of the original plant left. If your goal was to buy something eco-friendly, those toxic chemicals and the rayon fabric they produced are probably not what you had in mind.
Rayon is billed as a more environmentally - friendly, potentially sustainable version vs petroleum fabrics. Unfortunately, when push comes to shove, it might be even worse.
Rayon is produced by dissolving cellulose in a process that involves sodium hydroxide and carbon disulfide. Once that viscous material is dissolved into a solution and allowed to rest, the solution is then turned back into fibrous cellulose, which can be spun into threads using sulfuric acid.
The most common form of cellulose used for this process is obtained from wood pulp, bamboo, or cotton, which means that rayon is often marketed as a “natural fiber.”
The “natural” cellulose that eventually becomes rayon is sourced from already receding rainforests. The same companies that strip-mine places like Sumatra and Indonesia for palm oil are also cutting down entire ecosystems to gather the raw materials that will be dissolved and reconstituted into the paper towels. I am using air. Electric. And for greens I use clean 100% cotton fabric.

I have used this method for years, but now use damp cotton kitchen towels. No paper, no plastic and works like a charm on most greens - kale, lettuce, spinach etc.
Thanks for so generously sharing what you do. I’m learning so much! I’m 70, so you can teach old dogs new tricks. Really enjoy your channel.

Rachael I went yo the link for the Bamboo towels and it says each towel is good for 120 washings and that a roll last as long as a 6 months supply of paper towels !! I’d call that a great deal because a roll of these is less than $9.00 and you sure pay more than that for 6 months supply of paper towels!! Thanks for the storage tip and leaving the link for these towels in the description box! ❤️🙏✝️🙋🏻

We end up throwing away over 50% of the salad greens we buy at the grocery store because we don't get around to eating them soon enough. This year I converted about a 100 sq ft section of our yard into a "greens" bed. (lettuce, spinach, swiss-chard, arugula, kale). The idea is to stagger the planting so we have fresh salad greens throughout the summer.

Vinegar is the main ingredient here. It works to kill off bacteria and mold spores. Second the damp wrapping up the greens to help keep oxygen at bay and keep the greens hydrated.

Very cool tip! We do something similar...my wife has sewn up several Terry Cloth bags with a string tie on top, we just wet the bag, insert our cleaned greens and drop into the fridge. As long as the bag is kept damp the greens keep for weeks and weeks. When we leave on our boat for 10 or so days at a time our greens keep the whole trip! We have some Terry cloth bags we made years ago and still going strong!
    Thank you for the video!

I will have to look for those paper towels! What I do is take the lettuce from the store for example, break head lettuce up, romaine I just take bottom off, put them in a canning jar and use my food saver and dry seal them in the jar. They stay so much longer. I do my strawberries that way and they can last 2 weeks in the fridge

TH-cam suggested this video from last year. Love your short videos on helpful tips.
    1) I have no idea where I learned this method of storage so long ago. But it works like a charm. I used it when I ran a cooking school and taught high school culinary arts.
    2) I use the vinegar wash (then rinse it off) for berries and I've had them last a month stored between paper towels in a container with a lid. I think I tried it with greens/herbs once and I must've added too much vinegar. Will be trying again.
    3) I switched to using a 2 gallon ziplock bag. I could fit two rolls of greens/herbs vertically and could press out most of the air better instead of the roll being katty-corner in the gallon bag.
    4) thanks for the tip and link to the bamboo paper towels. I tried bamboo toilet paper once and didn't like it.
    5) BONUS tip for you to try. One of my former cooking school assistants taught me this and it changed my life...for real. I always hated how fast celery and green onions went limp/slimy in the fridge. So, now I wrap them in a paper towel and then in aluminum foil. I literally get 3-4 weeks of crisp celery. My home grown onions lasted a month. Some people have issues with aluminum foil. I feel the paper towel both absorbs excess moisture and prevents excessive direct contact with the foil. My doctor has never mention high levels of aluminum in my blood work 🤷🏻‍♀️.
    Have a blessed day! 👩🏻‍🌾

wow! that's brilliant. the complete opposite of what i have learned. i have heard paper towels help preserve lettuce a lit'l longer but not rolled and not damp. i learned to break the lettuce like a rabbit putting your lettuce into survival mode then jarring them to preserve your greens for about "10" days for prepping lettuce for my work lunch salads.
option: place a folded dry paper towel on the top of your lettuce to "absorb" the moisture before you screw on the lid. which i thought was whatever... i usually didn't.
i am looking forward to trying your method. store bought lettuce and greens go bad sooo... quickly. i got turned onto your channel today, august 14, 2023 from becky, at
acre homestead. she made a pineapple zucchini bunt cake??? i was fascinated! i had no idea all of the different recipes you can make with the plethora of zucchini harvest.
i have scrolled through your fabulous videos and have watched at least a half a dozen today. i am retired. you have created excellent information. thank you. blessings. 🕊
ps: mercy, i am just remembering that my m❤m use to do the same thing with her lettuce but in a hand towel!!! she also damped her ironing and rolled up each item then rolled them in a hand towel placing them in one of the 2 crisper drawers in our refrigerator. which was totally disturbing for me. i didn't pay much attention to the lettuce because i knew ironing was in my immediate future. it did make ironing all cotton shirts easier. yeah! back in the day before permanent press cloths and paper towels.

I thought I had been well educated in homesteading, organic farming, and food preservation long before today's common reawakening; but, I had no idea. My Gram used to can all salad greens in one way or another, and in fact, often grew things that were easier to preserve and store as opposed to today's 'salad greens'. Don't ever assume. Any sharable knowledge you have to offer is exactly what the human race needs, I wish people would get that. Love everything you guys have to share, including your example of morality through example instead of preaching. This 'old Crone' has learned a lot through your example, keep up the good work. Just an FYI.... they specifically plant trees for paper products. When they cut down the trees they replant trees again. We don't have a shortage of paper so enjoy using paper in any form you like. I know this because I live smack dab in the middle of a five hundred acre pine tree farm so I know a little something about where our paper comes from and whether or not it's sustainable.❤

I finally bought a salad spinner last year, and it's amazing how just a few spins gets rid of all the water. I think it was 30$ from Bed, Bath and Beyond. And with a coupon of course, it brought it down to 20$. (Those coupons never expire, I love that.) I felt a little guilty spending that money, but I never regretted it! Anything that looks like it might start to go bad whether it’s leafy greens, fruit, other vegetables etc I freeze on a cookie sheet or plate(after cutting up the fruit and vegetables into bite size pieces) then bag it up and store in freezer for when I use it in my morning protein shake or soups etc I rarely throw anything out and that includes already cooked leftover vegetables. What is not edible goes in the compost for the garden. After the large kale or Swiss chard leaves freeze they will often crumble up and be easier to store in the freezer. Thank you for sharing your cleaning and storage of greens in the refrigerator.

It so frustrating to see our own harvest go to waste I hope it help. Just remember the towels should just barely be damp, not wet

This storage method is GENIUS!!! Thank you so much for sharing!!! I was storing dried washed arugula leaves in glass container with dry piece of paper towel on top - it makes them last like a week. But definitelly not a month!

Thanks for the tip on the bamboo paper towels. What a great idea. I used my bottom drawers in my fridge. I rinse all my lettuce, add it to the drawer and cover the drawer with plastic wrap. I stack loose leaves for romaine. They are cold, green and crunchy weeks later. Now I added the paper towel. When I run out of space in my drawers for ready useable greens. I will use your method to store the extra heads and leaves in my garage fridge. I saw another gardener who, blanches and freezes Kale, etc. I am going to try it. Thanks Rachel!

Perfect timing, thank you for posting how to wash and store greens. I always have a vegetable garden but only planted lettuce recently. I needed to harvest the romaine but wasn't sure how to store it. I just harvested, washed and rolled it up. I need to finish my store bought lettuce first so will eat my homegrown next week.

@@1870s As a matter of fact I just finished washing and placing greens on paper towels and putting in gallon ziplock...gonna do this with my radishes too (picked those this morning also). I went ahead and did some cilantro since that's growing abundantly right now. Same to you...especially with your garlic! It's the first year I'm growing garlic and seems to be doing well.
