My tip is that when you're whisking the eggs and salt, add some milk in. You get delicious airy eggs that are just incredible. Make sure that the amount of milk you put in is able to fully incorporate with the egg yolks, otherwise you'll get some really weird looking milk oil egg liquid left over at the end.

Just don't forget to stir fry the onion, garlic and chili slices (and sausage cubes) first before pouring in the beaten egg (that has been mixed with the spices and chicken stock and milk first). I mix egg and milk 50/50, salt pepper, then I spread butter all over the cold pan, put egg mixture there, close the lid and cook it on low heat until it's not liquid anymore. That's my childhood breakfast, I also like to add fried onion on the bottom and also sink a slice of bread in the middle so it's all cooked together soft and creamy

Guys, pro tip: add a splash of half and half to your eggs when whisked and they will be creamy and moist no matter how long you cook them !!
