    They taste just like the shell of a sunflower seed or even the seed itself with a beautiful texture like potatoes with a hint of artichoky taste as well. My favorite vegetable of all time!

    I eat them raw grated and sliced thinly in salads and wraps. True, they can be invasive in the garden. I love them!

    In Poland we call them topinambur. I have a lot of it on my garden... A lot of... 😉 We love it raw in salads or baked like you.

    We had our first big freeze last night....as did most of Texas and I remembered this morning....it's time to dig my Jerusalem Artichokes! Jane, I just knew that story was coming...I'll be cautious!!! Loved that you called Ann, Mommy!!! 💗💗💗 I want to be just like her when I'm in my 80's!

    I was trying to come up with a name for my band many years ago, and I had a dictionary. I decided to randomly open to a page a just point to a word. And "Jerusalem Artichoke" was what I pointed to. I had never heard of them and thought it was kind of cool sounding, but no one else in the band did, so we became Reality Sandwich instead. Yeah...

    Cut and boil with a few skinned almonds, immersion blend with juice of 2 lemons . Great spring soup. You could probably use cannelloni beans instead of almonds.

      I thought they tasted as if you roasted a single massive sunflower seed with, as you say, a potatoesque consistency.

    Love this! I have a dedicated raised bed for growing them. They are invasive if not contained. I got the original starts from my CSA. If they are organic, just scrub and use. I love them in soups and when roasted, they are delicious as well. Just don’t gorge. You will experience the gasiness Jane described. Didn’t know I could eat them raw as well. Will try that next.

    I have only been able to find them once in my life. Like about 45 years ago. I peeled them, cut them into strips and ate them raw. Naturally sweet.

    I love sun chokes ! I think they taste like raw sunflower seeds with a potato consistency. They are great steamed and I love them shaved into ribbons in my salad as well.

    I was just thinking about Jerusalem artichokes because I haven’t seen them in ages. I always thought they had a bit of a nutty taste. I used to sauté them back in the day. Will have to try the oven when I find them again.

    I just had them steamed. They were wonderful. You can slide them out of the skin if you steam them.

    They make me gas-y but they taste great. I've eaten them raw but usually put them in soup. They are kind of like radishes or potatoes in soup. Supposed to be great for weight loss & diabetics.

    You can Lacto-ferment them; it's supposed to completely get rid of the gas. They contain inulin, a prebiotic. I've also heard that boiling them with lemon juice solves the problem, too.

    You can grate theses and cook just like hash browns. I usually steam them then use like boiled potatoes.

    Such a cheerful plant in the garden and they are so delicious. I love them roasted and they're delicious in a soup with chestnuts. Both are in season right now where I live. Great to have in the garden over winter. Just dig up a bunch as you need them, they store well in the soil - just leave the stalks so you know where they're hiding ;)

    My dad grew Jerusalem artichokes. We ate them raw! Never had any tummy issues. Love them!

    I just received a plant from a new gardening friend. I put them in a pot. They are starting to snap out of the transplant. I was a bit worried that the heat was gonna take them out. I haven’t found a place in the garden…yet. So im thinking of a bigger pot. My friend said the bulbs will grow out the pot. Im waiting to see what happens. Lol!! Now im gonna head to the local store and see if i can find sunchokes!!!

    I have grown them for years. And sold them by the 20 lb box. Yes you can eat them raw, but scrub or peel them first. They are good in salad, they're crispy and light, steam them, fry them, bake them, roasting over the fire. They are very veggie like.

    Jane and Ann, thank you for another super idea. I made them once and they were EXTRAORDINARILY sandy! I even soaked them first and used a brush to scrub them, and never made them again. Do you mind sharing what brand or where you purchased? Maybe mine were just a fluke, but I assumed they were all like that?

    Wonderful prebiotic! I eat low carb and these satisfy my potato-lust. I tried the boiling in lemon juice and it did help. I am wondering if a persons 'gut' can adapt similar to a person adapting to beginning a fermenting journey. We all learned the hard way not to eat a pound of home fermented sauerkraut when we first discovered eating our probiotics.

    You need to mix them into your homemade Kim Chi or just cure them with salt alone or pickle them in vinegar. Boiling in the lemon is not the only way. I just eat them raw mandolined on salad and I don't get the farts. I like the nice crunchy vaguely sunflower but fresher flavor

    I made them this week, left them in for 40 minutes at 180°C and they came out too well done but hey were sooooo good that I had to finish them all anyway! I just washed them, cut off the ends and sliced them, placed them on parchment and sprinkled garlic, rosemary and black salt. Can wait to make another batch, this time maybe with an addition of fresh lemon juice.

      I just made another batch, just washed them, cut them in half and sprinkled salt and garlic powder on them and placed them in the oven at 180°c for an hour. I can help myself, they are sooooooooo good!

    I ordered these for spring planting..have heard they are so tough u cant kill them and they grow even in poor soil..preppers say u can survive on these in desperate times...

    I didn't know you couldn't eat them raw. My neighbor gave me some and I ate them sliced on a salad. They remind me of water chestnuts.

    Where did you get the roots to grow.. please let me know. Thank you, I used to eat these 30yrs ago. They went off the market for a reason, I think other items pushed them out and there may have been a problem with growing them. Thank you, love all your videos!

    I roast them as well and I love the taste, but I don't like the skin, which I find too tough. Since they are bumpy and uneven they can't be peeled, so I stopped buying them. I wonder if boiling them would make the skin softer?

    My eldest boy (29) gave me a few tubers and they took off, I still have some in the ground because they go soft a few days after being dug up. Mike' got married this year to my new daughter in law, who is a veggie!
    they roasted the artichoke with home grown garlic and other root vegetables and made a puree. They both suffered badly with wind. So how long do you cook them in lemon juice to avoid this unwanted side effects? Please.
    By the way! they are a very attractive plant growing 8 feet tall, and with a lovely yellow flower, as in Sunflowers, but much later in the season, (November here in Ireland) when nothing else is flowering, worth growing just for some late flowers!

      @@megatuanis just use my own onions, celery, and what ever will make it taste good, or find an artichoke recipe and substitute, really easy!

    The only I've ever seen or grown were yellow. Awesome there's more than one color. Yes, you can eat them raw (I've done that a lot). They are gassy but they're a survival food. And ya, we grew ours in containers because we didn't want the invasive aspect. They're great in stew too. The raw ones are a cross between water chestnuts and sweet nutty flavor.

    It kills me to eat these things. Crippling gas pains. There are millions of them growing around the forest behind my house. Is there a way to make them not cause gas? I just got to the part about the lemon juice. I'll try it.

    Hello. I ate these artichokes from my orchard last night and the gases at night didnt let me sleep. What can I do? Dont eat a lot at the beginning? I read about this problema is some comments. Nobody talks about this in any video.

    We grow loads of sunchokes....boil them before you use them in a recipe..it will help to eliminate gas..😁

    Well, well, well. Would you get a load of these two zany women. They may have seen the passing of many springs, but they posses a vital essence of such utmost purity that the ravages of age cannot so much as brush against them. The gaiety with which they discuss the pitfalls of flatulence, the ecstatic euphoria expressed through fast-forward jumping jacks which transforms the mundanity of waiting for an oven into precious, old-fashioned fun, I must declare that these women are almost too sweet for words.
