Oh Man! Great combo. I'm thinkin' this would make a killer meatloaf as far as the meat mixture. Roll the cheese and jalapeno into the middle, glaze with a raspberry and chipotle mixture, then slice it, toss that on the griddle, do the maillard thing and then finish the sandwich like you garnished. Good stuff!
@@TheFlatTopKing yeah, the bacon wrapped thing was kinda kool but has become more of a fad than a culinary enhancement in many cases. If someone hasn't done it then it's worth a try or two, but as a baseline approach it's more trendy than substantive. I grind my own beef and pork so I can control the fat content an meat quality to enhance flavor. The bacon fat can help store bought grinds that are sometimes a bit bland, but if it's good quality beef and pork no outside flavor/fat enhancements needed. Don't get me wrong, I love bacon, just don't follow fads.
He's making a mess out of that beef, you cannot drag the spatula across the burger, because you will tear it every time, put some wax paper on the burger BEFORE you press it.
Well with all due respect it also extremely hard to do with chorizo as well. Its the mix consistently that helped with the spatulas. I do however have a smash burger video and used methods explaining different techniques.

Well I made them and dang were they amazing. I did 1lb each 80/20 chorizo. Home made queso. Absolutely amazing.
