@JosephCampese Don't worry the rubber gasket is strong to be used at 160 ° Celsius as you rightly assumed. The sterilization time depends on the size of the jars, the time ranges is from 20 to 30 or 40 minutes. For long time sterilization I recommend jars with screw cap. hi, I tried this recipe and it turned out great. I used Ball canning Jars. I heated the filled jars without the lids, in the meantime I had the lids soaking in almost boiling hot water then when the Jars came up to temp I applied the lids, they popped nicely and stored for nearly a year at room temperature. No problems. cheers
The vinegar must boil because, when you pour it onto the eggplant, it quickly evaporates without leaving a too tangy flavour. The vinegar helps keep the ph of the eggplant under control. Thank you for commenting
Hi, I have just preserved my aubergines in this way , I pressed them down quite hard and added oil up to the top. I put the sealed jars in the oven as directed. Quite a lot of oil has oozed out of the jars...did I do something wrong?
Hi, before looking for the vacuum you would have had to wait at least 2 days adding the oil when it was necessary to cover the aubergines, I'm so sorry for this, anyway I believe that they can still be saved by opening the jar and adding oil, and again for at least 2 days and then closing the lid and look for the vacuum. Please let me know how it went and if you need, I'm here to help you.💚

Antonietta Di Paolo Salve, la guarnizione a 160° non subisce variazioni significative ai fini del sottovuoto giacché il calore non è né eccessivo ne a lunga durata. La pastorizzazione è un metodo diverso di conservazione difficile da fare in casa che richiede molti passaggi. Buon lavoro
anna rosa lollobrigida Salve, i tappi non vanno bolliti mai, per sterilizzarli si mettono in acqua caldissima per una decina di minuti oppure si sterilizzano a freddo bagnandoli con alcool ad alta gradazione fino a 95° Anche i vasetti possono essere sterilizzati a freddo con alcool.
