Absolutely love the video! Olive oil roasted eggplants are my favourite vegetable dish, ever! Personally, I like it with steak and a wedge of cheese. Sidenote: I like to sprinkle just a pinch of sea salt right after the eggplants come out the oven, I feel that it adds just a bit more flavour.

I made this & it was simple and delicious- I had leftovers so I mixed with (chopped) baked onion, cherry tomatoes, parmigiano cheese & (a little) plain yogurt with a splash of dry ranch dressing... WOW ❣ An eggplant parm salad I can eat HOT OR COLD! Terrific.
We really enjoyed this as a dinner served with Kale Salad. I absolutely love eggplant and usually grill it outside in the summer. It was much easier to control roasting a batch rather than burning on a grill . Thank you for helping me make a perfect crispy caramelized new favorite.

LOVE Eggplant, HATE that skin. I'd peel the skin off, the rest of the recipe looks like it would taste awesome.
Feel free to peel if you like! The slices are just a little more fragile that way.
