I love the food in Italy and France, but the food in Spain is also amazing. What I really like in Spain, is the tapas culture. I like to have several small dishes that I can share with the people I am travelling with, instead of having to choose only one main dish. That way, you get more diversity and get to enjoy many dishes. We don't have so much renown because we didn't sell our dishes like italian immigrants sold pizza and pasta in USA, or the french selling their pedantry and arrogance everywhere, but out cuisine is very varied, healthy and delicious

I made this for lunch today and it was AWESOME! Happened to have a head of cauliflower in the fridge. Sometimes I get tired of eating roasted cauliflower….this stew really was excellent.
I just made this soup. Holy mackerel it is absolutely delicious! It’s light, layers of flavor & chock full of veggies! I made a huge pot so I can freeze some. Winner!
Decades ago there was a Spanish restaurant in Detroit. Great atmosphere. The owner played guitar and had Flamenco dancers on weekends. The place closed after his premature death. He and his wonderful restaurant are missed.

nah, stick with the cauliflower, it holds up better to the stewing, broccoli'll get mushy faster ... but if you must use broc. cook it quicker, 15 minutes would kill it

WHY do you remove the outer leaves? Have you ever tasted them? They taste exactly like the cauliflower!!! There's no reason to discard the greens! Eat one and you'll understand.

Because the original recipe does not call for them, i use them to make veggie broth, but you can add them if you like :) Much love
