Looks delicious. Back in the 60s and 70s here in Connecticut, many Chinese restaurants made a dish called Char Siu Ding. How I loved it. Sadly it is no longer made.

磨豉酱, if you're looking to buy it. It might come with the fermented soybeans still whole. You can just puree and water it down to the consistency you want.
