    I love watching your videos. I'm going to be making my brother and his fiance a cake for their wedding next year. I've been practicing every chance I get to get it just right. Watching your videos help. I've been baking for a while, but I've only been trying to improve upon decorating cakes/cupcakes for a couple of years. I'm getting better each time.

    So I’ve used this video to make flowers for my sitser’s wedding cake. After 20 flowers I finally realized the fine details in watching the video only about 100 times. This video is by far the best. One thing I did differently was I left the individual petals to dry a bit before applying each layer. That way they stand better and I don’t need to add any pieces of foam eta to keep them from flopping. They are gorgeous from this point on!

      Yes, that technique works very well. The reason I did not teach that is because gumpaste drys very quickly in dryer climates and VERY slowly in humid climates. This technique would not work for everyone.

      Yes I learned this the hard way when all 8 of my flowers melted by the morning. Took me about two hours (now starting) to do one. I was devastated. But I think I have hebhang of it. Chef Allan ... front he bottom of my heart. Thank you for your time and generosity.

    A tutorial on Camellias would be fabulous! The ones that have a bud in the center, not yellow and slightly pointy petals. Those are so pretty and uncommon to see tutorials in gumpaste.

    Thank you so much for your video tutorial! You're so generous that you're sharing your knowledge/techniques. What brand of gumpaste that is best to use for flowers that is not sweaty and will dry hard fast? I heard negative feedbacks about Bakels brand but haven't tried that brand yet. Some say they prefered Satin Ice.

      +Ami131531 My favorite is Choco-Pan gumpaste. It hardens very well and is easy to roll out paper thin.

    I am making peonies for my grandmother's 80th birthday cake and have watched multiple videos. This is one of the clearest and easiest that I've seen.       Gumpaste is similar to fondant but has gum additives that cause it to dry very hard. It is used for flowers and decorations. Fondant does not dry to a hard consistency and is used to cover cakes.

    I have a total plastic one, which cannot be used with these big flowers without falling down. I will not use that thing, it destroyed many flowers😏

    Does the colouring from the gum paste get into the pasta roller so that it can't be cleaned out and you have to have a dedicated pasta roller for your gum paste rolling? I ask because I have one pasta roller, but i use it for pasta rolling and was just wondering if it can be cleaned after use to use it for both pasta and gum paste.

      The colored gumpaste does not stain or leave coloring in a stainless steel roller. If you need to clean it, apply a little vegetable fat like Crisco to the rollers then wipe with a paper towel. NEVER put it in water!!!

    Chef Alan, I have learned so much about sugarpaste flower making from you. Thank you so much. My question is about your flower drying rack. I have searched GlobalSugarArt.com from end to end. I cannot find one like yours. Where did it come from, please? It is perfect for drying multiple flowers in all stages of development. I love how you can have centers drying on one level, half a flower or petals on another, & completed flowers on yet another level. The parts & completed flowers all have their own space, & nothing gets in the way. It also, from what I can tell, folds up when not in use.

      That drying rack is a pasta drying rack made by the company Martellato in Italy. I added the plastic tubing on each bar to increase the diameter of the bars and to create a more secure grip for the wires.

      Certainly, you can color any white gumpaste. I recommend using a good gel food coloring.

    hi chef! I used satin Ice gumpaste for my peony flowers and thought it would hold after drying a few days, about 3-4 days. after it was exposed to room temp. it softened and the petals were destroyed.
    when I went to our local baking supply store they suggested I should use tylose powder.
    I tried making flowers again and even used more tylose to harden it. but when exposed again to room temp. it softened again.
    do you have any suggestion how to stabilize gumpaste?
    I live in a tropical country, the Philippines and temperature is really a huge factor here. thanks in advance!

      Flowers should be made using all gumpaste. Fondant never completely dries, especially in humid weather. Unfortunately, even a good gumpaste will require drying in a room with very low humidity or the flowers will stay soft on the inside and may mold.

      Put them in your oven for 48 hours with the oven light on. Worked like magic for me. Ten of mine melted and it takes me an hour and. Half to do one. I felt so defeated until I tried this and worked so far.

    By watching your videos I am learning to do gumpaste flowers and during summer they dried nicely became crisp and I kept them in a box for further use. But just one cloudy day, and they became soft and broke..... 😢😢how to preserve and protect them from moisture and humidity

      Gum paste and sugar paste are different products. Gumpaste and Flower paste are the same and fondant and sugar paste are the same. So, gum paste and flower paste have more gum additives and decorations made with this dry hard. It is not very tasty. Sugar Paste and fondant are used to cover and cake and are meant to be eaten. Every brand has a different flavor and texture. Some better than others.

    Chef, could I use gum paste glue as well? What's the difference between us on a water pen and glue? I have my first big wedding cake coming up in September she wants gum paste flowers with buttercream any tips on how to secure the flowers?

      Julia Vinkavich Yes, gum glue works well. I find that it takes longer to dry and you may have to wait longer between layers of petals so that the first layer does not come off when adding a second layer.

      You certainly can use a gumpaste ball for the center but the flower would be very heavy and difficult to arrange. Also, a ball of gumpaste that size would require several days or weeks to thoroughly dry.

      +Armanni Pecora It is a sugar dough like fondant to which a gum additive has been added to the paste. This allows it to be rolled very thin for petals and it dries hard. It is edible but does not taste great.
