    Ingredients used
    300 gms of peeled garlic
    300 gms of peeled shallots or pran
    750 gms of red chilli powder
    1 tbsp salt
    1 tbsp cumin seed powder
    Pods of 20 black cardamoms
    2 tbsp of shahi zeera
    1/2 cup of fennel seed powder
    1/2 cup of corriander powder
    20 green cardamoms
    10 cloves
    10 black pepper
    1 tbsp of cinamon powder or 1 stick
    Extract of 2 tbsp of cockscomb
    Mustard oil 1 & 1/2 cup
    4gms of saffron

    I liked your straightforwardness in declaring the reason behind making a hole in the centre. It’s done probably to make air reach the inner portion of the Vaer . Beautiful innovation and procedure explained. Thnx dear

    Hole is made to increase surface area.So that it will properly dry in middle portion also.Your recipe nice. Hole is also used to keep many of the vercakes simultaneously hanging by thread to dry up.

    The hole in the middle is made so as to help with the drying process. A doughnut has a hole in it so that it helps with the frying process. If not the middle will be raw. The thought process behind it is the same.

    is this available in Mumbai ? if yes , where ? Is there any Kashmiri cuisine specific shop in Mumbai ? I had a chance only once to taste Kashmiri food at Kashyap Bhavan in Andheri and absolutely loved the Nadru haak and dum aloo. if there is any shop specifically for kashmiri products , id like to get the Kahwa ingredients too. I request the Kashmiri community to please comment here. Thanks

    Best ver masala recipe instruction I've seen so far. Thank you for showing jar paste version as well. Exactly what I've been looking for, but unfortunately I won't get praan. I'll have to use eschallots instead. Saffron is very expensive here. Not sure about obtaining cockscomb either. Do you only use the seed from black cardamom?

    The hole is made to enable you to string and air dry or sundry after they have been sun dried till they are hard enough to string.

      Thank you for watching. The Kashmiri pran or shallots have peculiar flavour and taste. Onions won’t give that.
