You get the flavor of the room/rum (brandy works well too) without the bite of the alcohol. Reduced wine is another example. Use red and not white.Slow simmer over a medium heat and constantly stir until thickened to the consistency of a light cream.Standard bottle yields a half cup. Good for red meats but I'm pretty sure you are mostly a vegetarian.Thanks for all the work you put into your videos.
