    I had this sweet dessert many times in bakeries in France. At first I thought it might be to difficult to make, but seriously it's not. It requires a bit of effort, right, but it's SO REWARDING ! you do it, you tell me :)

    This lemon pie is simply amazing!!!...
    just a couple notes:
    1. the pastry must be pinched with a fork making little holes so is not going to make bubbles (like you mentioned in the video) I did that and it was perfect!
    2. I make my merengue in another way, first whisk well the eggs until almost thick and then ad sugar (confectioners powder sugar) and just some drops at the end of vanilla flavour and also of lemon flavour. This way the merengue is going to cook faster and have more color on the decoration and looks more tasty :) Your lemon custard was so delicious!

    Thanks for the recipe. I made this for my parents, and they really liked it! I had to whisk the egg whites by hand and my arms were sore by the end, but it was delicious and worth the effort.

    I ussually make an anglaise creme with lemon juice and lemon zest but your curd looks SO good and simple I'm gonna try it next time.

    I had no idea this was a French pie. It probably explains why it is my favorite pie. :) Your recipe looks a lot easier than the one I tried to make years ago. Plus the "cooling it down before adding the meringue" part is probably where I went wrong before. My cornstarch broke, so I ended up with sweet, lemon, egg soup for a filling.

    Hi alex, you should probably put an annotation to let the viewers know how long you need to rest the lemon sauce in the fridge to let it set. from my experience. its about 1.5 hours. But thanks anyway. so delicious

I'm frankly not fond of lemon deserts and cooked for my husband, but I have to confess it's very delicious! Really easy and tasty :) Next time thinking of doing same in small tarts.

    You are an inspiration love. This looks fantastic and even though I am not a fan of lemon, I wonder if I could reproduce the recipe with a custard, similar to the one if your creme brulee you shared earlier. What do you think?

    ***** Bonjour. May I know what size of the baking pan that you used in this video? I might need to adjust the amount of ingredients for my pan size (8" loose bottomed cake tin, I don't have a pie pan :P).
    Also, you chill your dough after mixed together or you directly bake it without chill it in the fridge beforehand?

      ***** Hi man, I tried the your dough recipe, everything was good but it cracked at the edge when I rolled out the dough. May I know is it because I chilled the dough before roll it out? I tried to let it rest at room temp after took out from the fridge before rolling it but it still cracking. Looking forward for your advice :) Merci beaucoup.

    Hi. I made it just now. And I have few questions. 1.should I put the pie in fridge before I cut it? 2.after the final bake it has some watery thing come out under the egg white layer is that normal? 3.the meringue inside is wet is it normal or should I bake it longer time? Hope for reply.

      +Kathy cat Yep pie should be cold before cut. It depends on how you like your meringue, bake it longer if you want something crunchier.

      Also had quite a bit of weeping after cooling the pie for 3-4 hours, looks like a common issue. The question is how to avoid it? I've seen people using extra starch to stabilize for both curd and meringue. I'd try stabilizing just the meringue with something like gelatin or cornstarch. Or maybe just leave it in the oven after baking at a lower temperature to draw excess moisture, will it work? The overkill would be just baking meringue separately and assemble just before serving, but you can be screwed if the diameters don't match up... The pie was great btw, the issue is this unexpected puddle beside it afrer cooling. Should probably also use the place with dryest air to cool it.

    Ingredients:
    Dough:
    2 cups flour
    1/2 cup softened butter
    1 egg
    Pinch of salt
    Big pinch of sugar
    20 min in the oven at 180*C or 360*F
    Lemon Curd:
    Zest of 2 lemons
    Juice if 3 lemons
    3/4 white sugar
    1 tbsp cornstarch
    3 eggs
    + 4 tbsp cold butter
    Meringue:
    4 egg whites
    Lemons juice
    Pinch of salt
    30 min oven at 140*C or 280*F

    OMFG! I love it! Now I´m baking it in oven. And I´m really curious how it will taste.
    I just do it with brown sugar and rye flour...little bit more healthy ;)

    Hi Frenchie! I discovered your channel a few days back and I have become a huge fan of yours!
    I tried a few recipes and they were great :) however I tried this one and when I cut the pie there was watery stuff along with the rest (I don't have a pie tin so I made it in a shallow cake tin). I can't figure out why. Could you please help me? The flavours are great otherwise

      Oishi Ganguly Hey ! Maybe youre custard wasn't thick enough? Or maybe the pie wasn't cook enough( could be your oven, or the temp or many other things )
