  • This is one of the best fried rice recipes I have, and everyone I've ever made it for have been just over the moon about how delicious it is. Fresh pineapple, juicy shrimp, aromatic curry powder...Yum!

    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the TH-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via TH-cam videos, her cookbook, and cooking classes.       Got your hot Thai kitchen cook book at Amazon $ 18 , could be wrong but I heard that Costco has it too , was in Thailand 50 years ago , Ubon & Udon loved the ppl , culture , and different foods .... stir fry & soups

    I love watching you cook. A friend of mine and co-worker who is battling cancer asked me today if the fried rice I cooked two days ago turned out good. Then he told me his favorite is Hot Thai Pineapple fried rice, and I told him I would prepare it for him.I'm sure he's going to love it. Thank You so much. I will prepare it like you showed us.

    I just made this. Omg it's amazing, so flavourful it's better than usual restaurant standards. I used chicken fillet marinated with a little salt and pepper because my kids don't eat prawns. I doubled the amount as I have big family, it was a hit. Love your channel and all the useful tips!

    i just tried this and I'm blown away. i accidentally bought a hot curry powder but it added an element to it...this is better that i normally have in restaurants...thank you sooo much for your show!! i am learning so much and it's delicious 😍😍 happy new year indeed!!

    Thank you! I made two changes. I stir fried the shrimp in butter and I added Thai Basil at the end. It’s a wonderful dish. It blew me away!

    You are so awesome at explaining every single detail and this dish looks "Aroy D!".
    I noticed some people talking about using different types of rice so I thought I would share a great little tip. Try mixing Jasmine and Basmati rice together evenly (50/50) and cooking. I call the mixture "Jasmati Rice" and it always turns out fantastic!

    Hello Khun Pai, In your grocery store or supermarket look for canned pineapple in the generic section. Look on the back of the can and on the label there there be 2 kinds, one from Indonesia or one from Thailand. The Thailand one has NO SUGAR ADDED so has that little bit of tartness we all love.

    That's ok I don't like raisins too LOL. But I use dried cranberries if I do want raisins in my food. Thank you for this video. I love Thai food especially different fried rice dishes.

    Tried it today. Since I'm pregnant and cannot tolerate onion smell/ taste, I omit the onion. I have to say it's so good!!! Can't imagine if I follow through the proper recipe, must be super awesome! I have to say even my fussy toddler was clapping hands eating this fried rice (did not expect tht from her. LOL).     I mean, leftover rice really is the heart and soul of any fried rice. Cooking fresh for fried rice is quite uncommon.

    This is a great recipe, definitely a keeper. It didn't leave a weird aftertaste unlike other pineapple fried rice recipes I tried in the past. I didn't use the shrimp tomalley paste this time coz I don't have it, but will use it next time. I'm glad I tried your recipe, thanks for sharing :)

    i made this dish yesterday, and I don't want the pinaple liquid so I bake it on the nonstick pan to with higher degree 15 seconds each face to make it dry a little bit, so it will not liquid, and has a super great teast.

      I love fried rice, I like to make fried rice with chinese sausage, pineapple and luttuce.I just boil the chinese sausage and cut them into small piecees to make fried rice. The Salty Taste and the fat got balance out by the pineapple.

    Never tried Thai food before. Between a hiatus hernia and stomach ulcers, spicy food has always been OUT for me. But this looks like I will be more than willing to suffer any accompanying discomfort I may get from the tomato and spices used.

    One way to make a "signature" curry powder to your taste is to buy a variety of curry powder from different brands that you like and combine them all together. Adjust according to your preference. There is gonna be quite a lot of trial and error though to get the best curry combination.

    Adding Turmeric also gives good benefits and great color. I would recommend it. Also Oyster sauce which most Southern Asians use.

    I actually like my onions caramelized. What are your thoughts on that? Would that work with this dish. Also, red bell peppers would have looked pretty good as an added colour, but that's probably because I love them.

      Only if u add balsamic vinegar to the onions while they're slowly caramelizing.

    I found the shrimp paste at a thai grocery store. It was super tasty!!!!Thanks for sharing this yummy sauce. For whom haven't tried this paste if u're a fan of shrimp u must buy it!! U gonna love it!

    I love it and I always eat that in Phuket or bangkok. When I went to Paris I was in Thai restaurant and I ordered that also. Then I searched in TH-cam how to cook it and I cooked the same hahahhaha

    LOVE your videos! Being Thai, but growing up in the United States all my life, my mom says I'm mostly Faalang ;) (don't cook much Thai food as I should) and my husband and boys beg me to make Thai dishes more often.... BUT With the help of your videos, I think I can pull it off :) PLEASE do a video on make thai (fried) spring rolls (w/chicken, ground beef, or shrimp ;)

    Awesome knowledge n great meal.We cook same in India but omit pineapple 🍍 n in place of shrimp 🍤 it’s chicken 🍗
