I remember the Scotcheroos being sold at my elementary school bake sales in the late 1960's, early 70's. It was a small 1st through 8th school, so no hot lunch. Twice a month though, a few moms would make lunch for the school. One lunch would be spaghetti and then two weeks later the leftover spaghetti would be turned into chili, lol. On hot lunch weeks the moms would also host a bake sale at lunch and you could count on at least one batch of Scotcheroos. Yikes! This story makes me sound really old. 😁

Scotcheroos are a Midwest staple. You'll find them at every family, church or friends gathering in the Midwest! YUM! The trick it not to mash them too hard into the pan. Just press them lightly!

The lasagna and garlic knots look so yummy! I never pre-cook my lasagna noodles (and hate those no-cook ones). If you're going to make it ahead anyway, just use the regular ones uncooked. I add about 1/2 c. extra water to my sauce (the noodles will absorb the excess). I prefer Ricotta but will use cottage cheese if I can't find Ricotta or if it is too expensive. I do the separate layers. Leave it in the fridge at least 6 hours, then take it out and let it come to room temperature before baking.

    • @CookCleanAndRepeat
      @CookCleanAndRepeat  2 ปีที่แล้ว +3

That’s exactly what I did. I popped it out of the fridge later in the afternoon and then baked it. It was perfect.

I met a woman at the grocery. She used the no boil lasagna. She places them in water for 30 minutes before she assembles it. I was skeptical like you... it was awesome. But yes.. you are correct, still needs extra sauce

  • @Kathryn7

I have a tip for lasagne. I really dont like the no cook lasagne noodles, but also dont want to have to boil. I just lay the noodles in my 10x13 pan and cover for half hour with warm water. Turns out perfect every time.

I loved all of these recipes, on the garlic knots you can also go with a cinnamon and sugar mix instead of the garlic and Italian seasoning and have cinnamon knots very yummy for a pizza night dessert. On the Scotcharoos, I have made it with Cornflakes cereal using 7 cups instead and leaving the chocolate and butterscotch off. Very good and not as sweet. Thanks for sharing and bringing back good memories. ❤

Love the recipe!! I make a Texas Lasagna you might like similar to this! Of course I am from Texas!! But I use McCormick thick & zesty Spaghetti sauce packet x2 for 2lbs of meat. Mix as directions on back minus the butter, just the mix, tomato paste and water. After you brown the meat add your sauce that's already been mixed in a sauce pan separately. Boil your Lasagna noodles. My bunch doesn't like cottage cheese or Ricotta cheese so instead I use a Shredded blend cheese on the layers. Then back about 25 minutes until cheese is melted. This is one of our favorites!!

@@CookCleanAndRepeat We aren't fond of how bitter tomato paste typically is so we use a 15 ounce can of tomato sauce, and a 10 1/2 ounce can of tomato soup and about 1/4 can soup can of water. We always saute onions and bell pepper with ground beef and then add the sauce and our favorite spices. So yummy every time.

My mom made something similar to your dessert.
    ▢ 1 cup granulated sugar
▢ 1 cup light corn syrup
▢ 1 cup creamy peanut butter
    ▢ 1 teaspoon vanilla extract
    ▢ 6 cups corn flakes
    instructions
In a large saucepan, combine the sugar, corn syrup, and peanut butter. Cook over medium high heat until center starts to boil, make sure to stir constantly so the sugar doesn't burn.
As soon as the sugar mixture comes to a boil, remove from heat and stir in the vanilla extract and corn flakes, mix until corn flakes are evenly coated in sugar mixture.
Use an ice cream scoop to drop cookies onto parchment or wax paper as quickly as possible before mixture starts to cool and and harden.
Let cool on wax paper for 20 to 30 minutes before enjoying.
