  • For every pound of cooked fruit you add 1 pound of sugar. There is no recipe I follow, I just go by taste. This is water bath canned for 10 minutes.

    I loved this video. I was able to follow your steps and I noted that a lot of doing this marmalade is intuitive. I appreciate the “old fashioned” way of doing it. Thank you for sharing.

    This was incredibly soothing and relaxing to watch. Thanks for the lovely video. For everyone complaining about the lack of directions, there are many recipes available. Like a lot of time lapse videos, the point isn't to gain instruction, it's to gain appreciation or insight. If you have the means and inclination to comment on this video, re-direct your energies into a simple Google search.

    It would have been interesting to see the finished product spooned out of a jar, to see the consistency and appearance after cooling. This is so much simpler than anyone else's marmalade method I have seen. Apparently you are relying completely on the temperature to determine when it's ready and will set? The thermometer wasn't quite in focus so couldn't read the temperature you got to.

      Annoying that most recipes do not give temperatures. I did read on one "old fashioned" recipe that once the mixture gets to 217F on a candy thermometer you should be safe to go, slightly syrupy, slightly gelled. I've used this method for strawberry and raspberry jam and it works well. Will have to try some marmalade. And yes, the sugar ratio to the ripeness of the fruit is important.

    I find this video confusing. No information about quantities of fruit and sugar. The fruit does not seem to be cooked first before the addition of sugar and elsewhere I have read that adding sugar too soon will prevent proper cooking and tenderising of the orange peel. Please make this clearer.

      +Hugh Sheridan I have never followed a recipe for making marmalade, the guide line is 1lb of cooked fruit to 1 lb of sugar. And boil until thickened up.
      The old way of making this, they never followed a recipe they did it by taste.

    Chops up some oranges without rermoving pips, then removes some pips, then chops them up without removing the pips - then adds who knows how much sugar and boils it up at an unknown temperature - it's the magical mystery tour.

    I understand "no recipe", most of what I cook I just know how to cook.
    That may be why your video works well withOUT speaking.
    But I'm trying to figure out how much water.
    Also, I buy and like crappy cheap Orange Marmalade that except for the peels is very clear and has a "clean" taste. All recipes here look to have almost the viscosity similar to a jam. I assume that is because of the addition of the pulp.
    Is the pulp what causes it to "gel"?

      The peel is what causes the gel. There is lots of pectin in then.
      You add enough water to just to see it. Don’t fully cover the fruit.

    It is not that well of an instructional video and it doesn't give any real tips and it is not how marmalade was made the old fashion way as they use to gut the fruit and put it in a cheese cloth. However, it was relaxing to listen to. My grandmother taught me how to make marmalade to old fashion way and I'm 61 years old, her recipe was from her mother...that is the old fashion way.

      yes they are seedless. I am not fully sure on the kind of orange. I know they were sweet oranges

    Isn't it bad to boil it? cuz the Vitamin C in the oranges will fade away because of the heat

    Wipe the blade clean after sharpening knife, don't want to be adding bits of metal in the marmalade

      Who puts a comment like that... Or even thinks to after such an awesome video?! This how-to was tops; I don't think it could be better. I especially like that there were no words. I'm one of the very few people on the planet that learns best by simply reading. I am so blessed to have come across this specific video; I especially like that there wasn't any yacking on about obvious things. Not many people could give an informative tutorial without using written or spoken words. I especially like the knife sharpening part! the disposable spoons part was cute too. The music was even slightly synchronized with the knife slicing for a few seconds...

      The peel is what has the pectin in it.
      No awkward taste.
      It will last for 6 months to s year. Once sealed.

    While a nice video I agree instructions needed added I have no idea what liquid was she was putting in or how much, if she added pectin or not?

      Pectin is already in the zest that she didn't remove. I haven't tried it yet, but in case I might want it thicker, I can add some agar to the bowl while it's still boiling. I feel like doing it today 😊

      Use less peel, peel the oranges use the pulp and a small amout of the sliced peels.

      sadly I have no recipe for this. The true way of making it is for every lb of fruit z9cooked) you use 1 lb of sugar.
      Hope that helps. I go by taste not to sweet not to sour.

      +Laura Curnutt honestly it's as easy as it looks. Wash, cut and boil the fruit. Add your sugar and wait for thickness you like.
      I really didn't think this video would have taken off the way it did.

      i dont use a recipe for this. I go by taste. but normally its for every lb of cooked fruit you use 1 lb of sugar. i just go by taste

    Video is way too long. She should have edited it and take a few seconds for each task. We dont need to see you washing, cutting all each of the oranges. Good thing I kept forwarding it. If you dont have video editing tool then just use the pause button everytime.

    Most boring video !!!
    Do we need to watch washing and cutting each orange??
    Even before watching this video . . . today, I experimented with two oranges, which were sour, couldn't eat them. So I washed & cut them up, added water, and sugar to taste and cooked them in a pressure cooker for about 10 minutes. It turned out to be great . . . BTW, I am only an armature cook . . .my wife does all the cooking, but today she was busy.
    The only mistake I made, I cut the oranges into larger pieces . . . 8 slices of each. . . . So had to mush them up after they were cooked. Now, I know that the oranges need to be cut into very thin slices.
