    I learned about 10 yrs ago here on YT (pressure canning bacon BexarPrepper) CAN it uncooked... I trim some of the excess parchment paper from the rolled bacon before putting it in the jar. 75 mins for pints, 90 mins for quarts. It's like heaven in a jar. Put in a frying pan to heat/crisp up and you'd never know it was ever canned.

      Plus - you get the bacon grease! It is a welcome flavor ingredient and a great seasoner for cast iron. Also, fat IS a dietary need.

      I love Bexar Prepper. She cans hers raw.
      I love Prepper Potpourri. She cooks hers up (not all the way) and then she cans it. She takes it out and fries it up. Crunchy!!!!!!! I like the way it tastes better than raw packing. But you'd never catch me turning down bacon no matter how it was canned. That would never happen. I love me some bacon PERIOD!!!

    I buy pork belly at cash n carry. I brine them for 10 days then smoke them. I then slice and chop it into small pieces. Put it into a 16qt pot to slow cook all day. Have to pull off the lard throughout this time. Once it has cooked down I put it in the fridge over night. The next day reheat it to temp. I then put in 1/2 pint jars and pressure canner them for 75 minutes @15 lbs for my altitude. Great bacon bits. Will keep for several years and a open jar will keep in the fridge for a month or more.

    I hit the jackpot today at the Walmart where my grandmother lives! I make lots of veggie soup in the winter time and haven’t been able to find any cans of mixed veggies for over 6 months…today I scored 2 cases of Walmart brand mixed vegetables at only 38 cents a can! I also got canned tuna, chicken, corn, Bennie weenies, mushrooms and asparagus all with 2024-25 best by dates! I found packages of potato gnocchi also with 2024 dates so I can use the chicken and make soup and stay away from the restaurant and still enjoy our favorite Italian soup but stay healthy!

    I'm canning bacon right now and I have to say that cooking enough to fill the 3 jars is a real chore. I cooked it in the oven One pack is all that fits in the oven and one pack fills a wide-mouth pint jar. It takes a long time to cook and roll 3 jars and makes a huge mess.😲 In the first batch, I cut the bacon in half but had to cut the rolls down to fit in the jar. After that I cut them in thirds. AP's pre-cooked method may be more expensive but would be much, much easier. That's how I'll do it next time. Ugh! Just wanted to pass the tips along. Blessings. 💙

    add a piece of parchment paper on top - fold the bacon in half (top to bottom) and then roll up as you did. you won't have to cut in half and if you roll up tightly - should just fit into a pint jar. :)

      I make my parchment a full width and line each side with half pieces and put one 1/2 width of parchment between them, fold the full width in half and roll it up and put it in my quart jar. I do turkey bacon and it still works well.

    I canned a dozen pint jars of pre-cooked bacon , cooking them about 80% first on the grill in the oven and then brushed them with a little maple syrup and rolled them up in parchment. One session took 75 minutes in a 925 American pressure canner. It was a very greasy procedure but this stuff is good! AP, you just cheated on the messy step first! Haha!

    This looks great. It's a bit too spendy for me though. In the past I tried different ways of canning bacon. I had the best success in using thick sliced bacon canned in wide mouth pints . I rolled it up in parchment paper the stuffed it lengthwise in the jar. The bacon had been cut in half. I found that when I unrolled it and used a metal spatula to slide it off the parchment paper and into a frying pan, it crisped up well. Just a less expensive idea as Costco sells thick cut bacon for a reasonable price.

      @@CinderellaCoach All meats and meat proteins need to be pressure canned for 75 minutes for pints and 90 minutes for quarts. Depending on where you live, depends on what pressure to can. In my area it is 10 pounds of pressure, but other areas are different.

    Bacon was created/developed to be a storage method. They way its made now its not. So learn to smoke your own and keep it.

      @@kmiller6002 you would cook it first then dehydrate it and STORE it, not can it. Look for jerky dehydrating recipes. To get those perfect precooked strips u have to bake bacon or use an enormous cast iron skillet

    How do you ensure botulism is eradicated if there is no liquid in the jars? How can the center of the meat get to the correct temp without a liquid? I may be missing the concept can someone explain? Thanks

      Botulism cannot be killed by boiling water, only be steam, which is hotter than water. In a pressure canner, the inside of the jar is heated via conduction from the steam on the outside of the jar, which happens with or without liquid in the jar. That is my understanding of the science behind it. However, I have never seen a canning manual with instructions that don’t include a liquid, nor any instructions for canning bacon. This may be one of those times where there is the official way to do it (or not do it) and they way country people have been doing it for decades…not always the same.

      It is possible that the nitrates in cured bacon cause migraines so look for nitrate free uncured bacon (hormel makes one).

    I canned bacon last year. But my bacon was not on parchment like yours! I had to put in there. But in turn I was able to use unbleached parchment paper. Thank you! I have been anticipating this video!

    The warnings you see regarding canning something fatty is if the fat "fills" the jar, it insulates the interior from the heat. Pressure canning this way, by precooking and wrapping in parchment avoids this issue. I have had EXCELLENT results canning bacon the way AP shows. I use pint and a half wide mouth jars, which works really well, as well as the pint wide mouth.

    I canned bacon raw because there just isn't enough room in my tiny kitchen for cooking a lot of bacon. I also don't have the patience to cook all that bacon. I never even thought about using the precooked bacon. I have 6 packages in my fridge. Guess what I'm going to be canning next😁😄❤ Thanks AP!!

    What a brilliant idea! I canned raw bacon, and ate it before it could turn rancid. I also canned bacon fat in 2012, and opened a jar last week, but I was bad. Doesn’t last indefinitely, but it can, and should be rotated.

      I'm going to do the same thing once I finish canning the meatloaf today. Half I did as my usual meatloaf 😋and the half I'm doing now is a Mexican style😁.       @@northerngirlhobbies Yes, I did it after seeing this video. I cooked it half way in the oven then canned it. We don't like crisp bacon so next time I'll cook it less before canning. Rudy's way is more expensive but less messy. Was telling friend this morning that I need to can more bacon. 😄

    AP - this is a FANTASTICO news. Am glad it turns out just like pre-cooked bacon even after canning. You mentioned you could also pre-cook your own bacon and do the same thing using parchment paper?
    As you stated the Costco pre-cooked has gotten ridiculously expensive. Remember way back a 1 1/2 ago, that same Costco bacon was a 2 pack for $9.99--- YIKES

    i want to do this, do you just leave it in the jars on your pantry shelves and how long will it last? I hope you or someone responds because I have been thinking about how to preserve bacon other than just in the freezer

      Love your videos! Yes pressure canning will make it shelf stable! Nutritionally it’ll be good for 3 years! And If the seal stays, it’s good to eat indefinitely to a lot of people :) (it depends on people’s preferences!)

      Hi! Yes you just remove the rings after pressure canning. Wash jars in warm soapy water. Dry jars and put date and label it. Put jars in cool dark storage. I'm pretty sure shelf life is at least 18 months. Hope this helps! God bless!!

    I buy the twenty pound boxes of ends n pieces cheaper wrap in parchment paper raw when you are ready to eat I open the jar and fry until crispy. In the 50s my folks bought store canned bacon and and fried it the same way. I find it’s crispy

    Thank you for the great video! I always used raw bacon wrapped in parchment paper but it does come out a bit brittle, which I don't mind. But using the pre cooked bacon looks like was the secret to success! Thank you!

    I have a small flat electric grill. I cook my bacon almost done on the grill then wrap in parchment paper and can. I tried the raw pack but it was impossible to get an actual strip of bacon that way. You only need so many bacon bits....lol

      Yes you can pre-cook the bacon and roll it in parchment. Don't overcook the bacon. Just cook it to the doneness of the commercial packs then roll it in the parchment. And ALWAYS save your bacon grease. Much Love

      Cook half way cause if you cook it till done when you go to wrap the bacon will break and crumble. You don't even have to cook it either just lay out and roll tight with parchment paper. I not tried either way but have seen it done. I have raw packed bacon and use it regularly but that is like one jar per month and I did several cases of bacon. I use the canned bacon for so many dishes like omlettes, salad toppings, kale and onions , just so different dishes and will continue to can raw packed but to have bacon that can be crisp for bacon and eggs super cannot wait to try both uncooked and half cooked and see which I like best.

    I bought the 1.5 lb thick cut bacon on Amazon Fresh that was on sale and had an additional 20% off. They let you buy 10 per transaction, so I did two transactions. So I now have 30 lbs of thick cut bacon 🥓❤️🥓

      We're in the boonies. No Amazon fresh or whole foods or decent grocery stores. Ugh. There's a butcher shop in town but it smells. We're looking for a farm to source our meat from.

      @@vinlago I feel your pain, same situation here. We go to ‘civilization’ once or twice a month to shop as our local grocery store is pathetic. I can’t tell you how many times I’ve picked up an orange to find the underside blue-white moldy. Don’t trust their meats. We don’t even have a smelly butcher shop. I guess that’s the trade off for cleaner air, open space and no traffic, but at times (like when the new puppy eats the bath mat) it would be nice to not drive 1.5 hours to a store!

    Wanted to ( and still might try ) to freeze dry some . Fatty products aren’t good candidates and the shelf life is much shorter but I still have to play with it

    Making room in my freezer for…more bacon lol I got it at the commissary (we are retired military) today for $4 lb. I grabbed 15 lbs. what I really wanted to share was I laughed so hard when you picked up the rolled up bacon after you cut it and dropped it into the jar. Don’t know what I found so funny but I did crack up lol thanks for the video! Off to canning bacon!

    A little off subject but the best way to cook bacon is parchment lined cookie sheet and bake in oven. Heres a trick, before putting in oven, cover all the bacon with water. Rotate pan a few times while it bakes. I usually uae 325-350 oven temperature. Your bacon will cook evenly, wont curl up, be crispy but not hard as a rock in some parts because the water ypu use in beginning. You will never fry bacon on the stove again

    Hey ap, I have a steam sterilizer. It looks exactly like a canner. I think. Do u or anybody know if I can use my sterilizer for canning. I bought it for tattooing but since covid, i haven't tattooed and i never even used this, so it would b cool if I could use it for this.

    I buy irregular cut bacon strips in 10lb boxes. I believe the brand is Covered Wagon. The cost varies from $19.99 to $23.99. It’s the only bacon I buy.
