    When I was canning deer and moose meat I would put on top of the meat a boullion cube and an onion slice it made a nice gravy

      just a pinch. 1/2-1/4 tsp. A little goes a long way

    Liked the video but I gasped when you put cold glass jars in a steaming pot. Cool jars, cool water in pot. Hot jars, hot water in pot.

    I have canned lots of pork loin and it is wonderful. Open the jar, add some BBQ sauce and wow it is good. I also have canned chicken and it is just as good. Would love to have a good recipe for homemade canned BBQ sauce

    I read somewhere that our ancestors would pack meat into an intestine with layers of fat & berries & it kept 6months & apparently great food for sustanace in severe cold weather.

    have you ever try raw beef with cranbery dry and onion soup dry on a quart , just use half of the onion soup lipton and a litle bit of water and bang

      You have to be very careful with using dry onion soup mixes because of the ingredients listed. Not everything made commercially is good to use in canning.

      Tim, we can about 800 jars a year and we put the jars in a big pot and add oil and let it get to about 260 degrees and keep them in the pot for a couple hours. Then we put the jars in a pot of boiling water to get a lot of oil off the jars and you have to wipe don the jars.

    Also ... should have mentioned .. if the power goes out, seriously in my area happens every 3 or 4 years or so ... for a couple days, everything in the freezer needs to be cooked and ate ... but canned food?? ... good without power .. good for a year!

      A very good point.
      And that is one of the reason to have canned food and dry foods on hand.
      We lose power many times a year and last time the power was out for 1 and 1/2 days.

    I live north of Idaho/Montana border. Is the Jiggler supposed to Jiggle wildley all the time? OR is it okay if it "cuts in and out".

      Someone on another site said that if it goes all the time you need to turn the heat down but look into it anyways, you dont want to mess around with your caner

      Check your local extension office for your specifics......altitude plays a big part....

      Each canner is different.....just follow the included directions carefully.

    75 minutes PER PINT??? So for a dozen jars I need to have the pressure canned going for 15 hours?? That seems very excessive! Can you provide some clarification please. ☺️

      These are USDA guidelines. Meats harbor bacteria. Period. Look up the USDA guidelines yourself. I would not post this without much research.

      That is per canner load not per jar. It takes 75 minutes a load, whether it is full or you only do one can. Mmy 23 quart presto canner can hold 20 pints at once.

      I have eaten them up to 2 1/2 years, but we eat it up pretty quick....usually within a year...
