The CRISPIEST Homemade Tonkatsu Recipe - How To Make Japanese Katsu

  • The crispy outside and juicy inside is the signature of the great Tonkatsu (japanese fried cutlet). This is just perfect to eat with rice or in a sandwich.
    📜This recipe will make 2.
    🔹 Ingredients: 🔹
    - 2 pork cutlet
    - flour
    - 2 eggs
    - panko breadcrumbs
    - salt
    - oil for frying
    🔹 Preparation: 🔹
    1. Remove the bones from the cutlets. Cut along the fat edges vertically, which will help in preventing our pork to curl up when we fry it. Salt them on both sides and place them into the fridge for 30 min to an hour.
    2. Pat the cutlets dry and let's do the breading. First coat the pork in flour well, transfer to the egg and coat it well. Now we go back to the flour and again into the egg. Lastly we bread it with panko breadcrumbs well. You can also press down on the cutlet a bit, so the panko sticks better.
    3. Heat up the oil to 180 °C. Place the cutlets into the oil away from you, so you don't splatter yourself.
    4. Fry them for about 2-3 minutes or until the inner temperature reaches 57°C. Once golden brown transfer them to a wire rack do drain excess oil. Salt them immediately.
    5. Cut them in to strips and serve on a bed of rice, with cabbage or in bread as a sandwich.
