you can just simply measure the room sise with the "Reference Distance" in Fspy and then choose the axis you want to use, i usually use "along with the z axis" and set it from floor to the ceiling which is 2.4 meter and so when i import it into blender everything would be in the right size.

But I learned that your way of making a plane in front of the camera and knifing it to death is a good way to make a holdout plane! Thank you sir! (and btw, I bamboozle those kitchens all the time in my models, so don't feel bad chopping them up!)

You could also run your image texture of the room through the emission instead of the base color. So you dont need to add lights, and youre getting your reflections within your cg elements.
That’s true. Cg tends to be Pandora’s box, when aiming for realism. I use the camera project addon by Nathan Vegdahl from the blender foundation for projection.

This is a very interesting question. I imagine if you add the 360 pano into the environment image or onto a sphere it should make all the lights appear straight from the perspective of the camera. You may then be able to build the walls up. Interesting for sure!
Yeah I totally get you there. The reflections in the shadow catcher didn't push through enough. I think a shadow catcher pass in the compositor should be able to bring that out! I'll try that for v2 :)

that might be a little bit difficult with getting realistic shadows onto the emission objects though

This shouldn't make much difference becuase I've added area lights to light the scene rather than an environment light
