Is the drying portion done in a food dehydrator or on the counter top? If done enough food dehydrator, at what temperature?

Mine came out a little bitter, do I boil them a little longer?

sorry to hear that they came out bitter, I found that if I get most of the white pith off and wash the peels in cold water before boiling then they are not as bitter, give it a try and let me know how they come out.

the yellow part of the peel contains the lemon oil, the fruit inside has the juice, but the white part of the peel has bitter compounds in it.

How do you store the candied peel? I have a lot of lemons and want to preserve them for long term usage.

store in an airtight container, will be fine for a month, then will need to discard.

Deborah you could probably dehydrate them in your oven. I dehydrate food all the time

What do you mean the sugar syrup or the blanching water? With the sugar syrup I recommend reducing the total quantity to a quarter of what she made she made way to much for the number of lemons she had, and once you have used the sugar syrup to cook the lemons it goes great in a lemonade because it’s just sugar water infused with lemon, also the water you used to blanch and boil the lemon peels with can be used as the water in the sugar syrup which would increase how lemony it tastes

@@gurvzz great advice. But the blanched water on its own - I have tasted it and if I mix it 1:1 with tea, it tastes great! Are there any other used for that blanched water?

Justyna it’s not supposed to cook for that long. I followed another recipe which was less and it worked just fine. But it’s still an ok recipe so give it a shot. Up to you at the end of the day. Xx
