I use a lot of lemons and buy them at Costco, but often just toss the used lemons down the disposal to freshen up the sink. How fortunate you ae to grow your own lemons and have inspired me to make the candied peels and then the stollen for the holidays. Great gifts for my neighbors.

I found this recipe, which certainly is traditional, after I went off-road, but with surprisingly good results. I used similar amounts of sugar/water and medium heat, but I did not trim all of the pulp off, added the juice to the mixture and added a tsp of salt - then simmered up and down the heat for 3 hrs+. The result: a very mellow citrus flavor with caramelized, brown syrup and a nice slightly bitter citrus edge which balances the sweet. Its time to add to various dishes, the first is in fresh hummus. I will try this recipe, too. Thank you.

This is the way to go for candy. I used to be a big candymonger but growth is now horizontal and not vertical; reading the ingredients in the candy isle is a disgusting turnoff. With this recipe, you have to work for it and thus appreciate it more; you also know exactly what’s in it.
