I went to my local Thai restaurant with a German friend. When he asked for Thai hot, two waiters AND the chef came to check if he was sure that's what he meant and explain just how hot it was. He just laughed, had to explain that he'd lived in Thailand for a few years. I can barely cope with mild but, he ate every bit and obviously enjoyed it.

if you look at the history of chile peppers, it's clear that South Asia began modifying them immediately thru old fashioned genetic engineering... there's barely a gap (in history terms) between OG chile being introduced to Asia and the very specific little Asian peppers being part of the diet. So I'm mixed but grew up with my Thai grandma. A lot of my family can't handle spicy food, but I love it. Whenever my grandma cooks, she makes a separate portion for herself with more spice. I always ask for some and she always says it's too spicy for me. It was the same thing for years, I ask and she says it's too spicy. Finally when I enter high school she starts sharing her food with me, to both of our delight. A few years later to celebrate me getting a great job, she decides to make my favorite spicy beef with rice. Turns out that while my lips and mouth can handle extra extra spice, my stomach can't 😭 I ended up vomiting my first day at the new job. I felt so bad because the spicy beef was SO GOOD. There were like 10 levels of spicy if I remember correctly. 1 being the mildest and 10 hottest. I picked level 9 because I was confident in my spice tolerance but also being slightly cautious because I was afraid of wasting money on food I couldn’t eat if it was too hot. Anyways, once I had the wings I could barely feel the heat. It was barely spicy and I thought they either gave me the wrong hot sauce or they have no idea what hot means. I used to worked as a waitress in a thai restaurant in Thailand, some tourist from Canada told me they want the real Thai spiciness, to have the authentic taste and real experience.
I went in and told the chef and my Thai colleagues, they just laughed, and proceeded to give him the tourist version.
The next time I checked how he was doing, and saw that he was crying.

When I was stationed in Japan, there was a chain called Coco's Curry. They would ask for what level of spice you wanted in your curry from 0-10. There was a Coco's Curry at the closest train station to the base, and the military members loved to go there.
I had a coworker who was proud that he could handle a 10. One day, he went downtown and saw a Coco's Curry. He went in and ordered a 10. He apparently was in pain with a single bite and learned that the local Coco's Curry was downplaying the heat for the Americans.

I absolutely couldn’t stand hot food before, but after trying this Thai place near me that has really amazing authentic Thai food 🤯 spicy food is so delicious when the spice is used properly for flavour instead of just hot for the sake of being hot like all American food is! Whenever we eat Thai he and his family order everything “Thai hot” (that’s actually what’s it’s called, which I never knew - I can’t even handle white people spicy). When my husband cooks for people he has to make two versions: One Indian people spicy and one white people spicy. It’s no joke - he made our baby cry once because he cooked her scrambled eggs in a pan he used to cook himself eggs. He wiped it out, but there was just so much chili oil residue still in the pan. (She was totally fine, just startled - and now at 18 she LOVES her dad’s spicy food). I feel like there should be warning labels 😂

I was at a Thai party and someone handed me a birds eye and told me to try it.
