Tips
(1) Many people prefer not to peel yellow potatoes but for this recipe, please peel them to achieve that perfect, uniform crustiness. Non-peeled potatoes may not hold the seasonings as well.
(2) Boiling the potatoes before baking not only cuts down on baking time, but it also contributes to the formation of that perfect crusty exterior because as you toss the boiled potatoes in the seasonings, they chip off slightly and that’s what forms the crust when baked.
(3) Do not overboil your potatoes as they could crumble during the tossing.
(4) Drain any excess water after 10 minutes of boiling the potatoes.
(5) You can bake a little longer if you want more browning.
