    pupusas are traditionally made with lard instead of water in the masa so they're not too dry. i don't usually like that cabbage mix so i go for this tomato sauce specifically made for pupusas and LORD it makes them so amazing. so glad you enjoyed them!!!

      loyd idk, my family uses lard so it may differ for each salvadorian city. it gives it flavor & takes away the need for oil.

    pupusas are my childhood. so glad you gave these a go!
    your masa definitely needed more water, btw. the consistency simillar to cookie dough. Your pupusas came out looking great anyway.
    I recommend making a tomato sauce next time to go with this.
    Boil like 4 tomatoes with an optional jalapeño, some white onion, and add salt to your liking. once everything has gotten to know each other ;), toss it in a blender with some of the water you boiled it in and blend away. Then throw it back in the pot/pan u used to boil it and heat it up until it starts boiling.
    ive really only ever seen my mom make it... haven't tried it out myself so im sorry for not having exact instructions. but anyway, so glad you made these!

    Pupusas are the bomb its street food that cost like $0.70! Im Salvadorian and the cheese we use is call “quesillo” not mozzarella so that way it wont be dry, I guess they used mozzarella in the recipe because quesillo is very hard to find. Great Job David!

    Those "burnt bits" on your pan are called 'FOND' all you needed to do was had quarter cup of wine or water to the pan and boil it when pan is still hot. Add the juices to the pork in blender.

      Maybe next time he can do it. Perhaps he would have rated the dish a 9.8775 if he made a sauce with the fond. It’s really concentrated enhanced flavor.

    im Salvadoran and omg I love when people see how amazing pupusas are, I knew you were not gonna be disappointed!! ( btw the cole slaw thing it's called "curtido" the means pickled, and you felt it was a but dry bc you need to add the sauce, just a regular homemade tomato sauce) also the kind of pupusas that you're trying it's called "revuelta" wich means "mixed" love youuuu ❤❤❤❤

      i love sour cream on my pupusas lol but yea he lacked the salsa and used pork loin which isnt fatty enough and any latino and uses masa knows that dough NEEDED lard so his decision to throw oil into it was on the right track

    Hi! I just caught this video of yours. I’m Salvadoran, and have a few recommendations in case you ever want to make more pupusas:
    1. Your masa was too dry. That was why it cracked. But you did the right thing: add a bit more water to the dough, and also put some oil on your hands when you’re forming the pupusas.
    2. If you use a little bit of oil on your hands while you’re forming the pupusas, you don’t need to add any more to the pan, comal or griddle. The pupusas are not meant to be fried.
    3. Next time, try using pork shoulder, neck or pork butt instead. The fat content of those cuts is a lot closer to the one we use to make our “chicharrón” (don’t confuse it with other countries’ chicharrón; ours is meat fried in its own fat).
    4. You can also try pupusas revueltas, which combines cheese (mozzarella, Oaxaca, quesillo, enredo) with chicharrón and refried red beans. They’re to die for!
    5. You can also substitute the corn masa harina for rice flour. Deliciously good!
    6. Our “curtido” or pickled coleslaw is not that pungent. We use pineapple vinegar mixed with water. We also add salt, pepper and other goodies like cucumbers, big onion slices and jalapeño peppers. The vinegar helps cut the heaviness from the pork and provides texture while complementing the pupusa’s flavors.
    7. Don’t even think about eating pupusas with sour cream. That’s crazy! But most Salvadorans like a very light tomato sauce on top of the pupusa and/or curtido.
    Finally, thank you for bringing one of our culinary treasures into your world and sharing it with your viewers!
    PS: I am truly impressed to see how many Salvadorans watched your video. Besides the comments about the dry masa and the lack of salsa, everybody was impressed with your efforts. That’s amazing. Congratulations!!!

    I'm realy happy you enjoy this recipe.. but as someone who have try autentic Pupusas in El Salvador I can tell you they don't use Mozarella cheese and the reason why is dry is becuse you are missing the salsa made with tomatos, onion and red pepper.
    Also, my mom add a 1/2 teaspoon of butter with the cheese so it gets more melty and delicious!

    Hi David! When my mom(or I) cook pork like that, we typically use a deep set pot, (we use a wok honestly) with oil that reaches at least half way on the meat, it makes cooking it more easier and less burnt stuff suck on the pot! You just use a slotted spoon to get them out and then let them drain on a paper towel!

    We dont use mozzarella cheese, we have our own type of cheese called "Quesillo" it's very different, and the pork is called "Chicharrón" it is basically pork fat fried until crispy, it isn't pork meat, I bet That What you made was delicious but I bet you if you come to El Salvador to try them, you'll discover That they are completely different and much more delicious!

    Growing up half Salvadoran my mom and great aunt would make these all the time. I would try and be like them and how they would make the process look like clockwork. I would dip my fingers in water and grab a tiny ball of masa, fill them with my favorite ingredients pat them between my palm and make mini pupusas that my sweet Great aunt Kika would put on the skillet and cook for me. Seeing Salvadoran food becoming more mainstream and appreciated is weird yet heart warming. I hope they bring you all as much joy as they have for me over the years.

I’ve been watching you for probably 2-3 years now and by how well your videos are made and regularly posted, I thought you would’ve been close to a million by now. Not saying this in a bad way!     You are right about needing moisture. Curly didnt say in the video but we eat pupusas with that slaw (curtido) and salsa. Its like a thinned (more liquid and vinegary) version of a marinara sauce. If you make them with your family next time try some salsa recepies out :)! Awesome video!

    Omg I'm such a fan of u and the fact that u tried pupusas makes me so proud! You can try and mix many more things for the filling: like red refried beans and cheese, just cheese, shrimp and cheese and many more...actually in El Salvador we have what we call a pupusa loca; it's a very, ridiculously large pupusa with all the fillings you want: pork, beans, cheese etc. Thank you for making this video! 🤗💕

    My abuelita makes these often but for me she only makes bean and cheese since I don't eat pork, and I eat them with a salsa that goes with them not only the Curtido.

    Great instincts David! Yes, add more water to the masa mixture. I've seen ppl making tortillas and they are crack and dry at the end. Great job!

    I'm Salvadoran myself and love to see when people make Pupusas. Pupusas are amazing and can never be a disappointment. My favorite Pupusas fillings are queso y frijoles (beans & cheese) and also spinach and cheese. I’ve also tried rice Pupusas, they’re good but not as good as the authentic flour mix! 🤩
    EDIT: There is also a salsa that goes with Pupusas and make it more moist so it isn’t so dry to eat!

    Omg I never hit like before see the video however I’m so happy to get something from El Salvador 🇸🇻 I’m so proud to be from a country that has the most unique food and so delicious 🤤 you should try more like making Nuegados or empanadas de leche and give more videos of Latin food!

    Next time use regular cabbage while making Curtido and when you ferment it it should if you can be in the jar for at least 24 hours or longer to get the best taste
