Very informative. I had no clue that there was "aged" rice and that some regions or cultures had different preferences. My interest is the nutritional aspects. Especially for a rice with a lower glycemic index.

I always buy old crop rice. It's better for stir frying. The asian markets used to sell old and new crop rice, now most sell only new crop.

I think the cooking and colour differences are the only ways to identify the old and new rice..if you polish the old rice much there is chance to break..

Any parboiled rice will do good for Khichdi. Or Gobind bhog rice, which is majorly used for sweets in West bengal region. It has a good fragrance

What do you mean when you say Rice to Rice and Raw Rice Aren't all Uncooked Rice Raw? Please explain. Thank for the Info.

When we talk about "Rice to Rice" or "Raw Rice," we are referring to different stages of processing that rice goes through before it is ready to be consumed.
"Rice to Rice" refers to the process of converting paddy rice (rice with the husk still intact) into white rice (rice with the husk removed). This process involves several steps, including cleaning, dehusking, polishing, and grading. The end result is a polished white rice that is ready to be cooked.
On the other hand, "Raw Rice" refers to uncooked rice that has not yet been processed into polished white rice. In other words, raw rice still has the husk intact and has not yet gone through the "Rice to Rice" processing steps.
So while all uncooked rice is technically raw, the term "Raw Rice" specifically refers to unprocessed paddy rice that has not yet been converted into polished white rice through the "Rice to Rice" processing steps.
