    Afghani Kabab
    Ingredients:
    Skewers 12
    Beef mince 750 grams
    Lamb fat 250 grams
    Salt 1-1/2 tsp
    Garlic 1 tbsp
    Onion 1 small
    Bread crumbs 1-1/2 cup
    Tomato (cubed) 4
    Oil as required
    Method:
    In a bowl except tomatoes mix all ingredients and make small meat balls .Then Pierce these meatballs in skewers .after this in a pan heat oil and fry for 10 minutes then serve it.
    Beef Pulao
    Ingredients for beef stock:
    Beef 1/2kg
    onion 1
    tomato 1
    garlic 8-10 cloves
    Ginger crushed 2tbsp
    Fennel seeds 2tbsp
    Coriander seeds 2tbsp
    Red button chilies 5-6
    Green chili 6-7
    Cumin seeds 1 tsp
    Star anise 2
    Bay leaf 1
    Cinnamon stick 1piece
    Black pepper corn 4-5
    Ingredients for Masala
    Rice ½ kg
    Yogurt 1cup
    Mint leaves ½ cup
    Orange juice ½ cup
    Green chili paste 1tbsp
    Black pepper ½ tsp
    Salt to taste
    ginger(julienne) 1tbsp
    Chicken powder 1tsp
    Star anise 2
    Fennel powder ½ tsp
    Green cardamom 4
    Salt to taste
    Caraway seeds ¼ tsp
    Dried plums 6-7
    clarified butter ½ cup
    Fried onion 1cup.
    screwpine water ¼ tsp
    Method.
    In a pan put all the stock ingredients along with 6cups of water and cook for 2hours until beef gets tender. Take out meat from stock and safe stock for masala.
    In another pan heat clarified butter, add green cardamom and cumin. In a mixing bowl add yogurt, green chili paste, mint leave, Julienne ginger, Star anise, fennel seeds , plum black pepper, and orange juice, chicken powder to mix well and pour this mixture into meat to cook for 10 minutes. Now add stock and bring it to boil then add soaked rice cook on high flame to reduce water add fried onion screwpine water then put it on dum for 10-12mins.
    Mango Surprise:
    Ingredients:
    Mangoes (chopped) 1 cup
    Mango ice cream 2 scoops
    Almonds (sliced) as required
    Wafer Biscuits for garnishing
    METHOD:
    Put mango in a serving bowl. Top with ice cream, dazzling. Decorate with almonds & wafers.
