Recipe update: 10/18/20: Adjust the sugar according to your guava's sweetness. In this recipe, I used guava with pink flesh and that required me to use 3 cups of sugar. I made another batch today and used guavas with white flesh. It was so sweet that I only added 1 3/4 cups of sugar.

I make guava juice but I remove all the seeds and purée just the outer part. I strain it, then make juice. I’m wondering if I can use just the purée, and not add the saffron since I have none. One recipe calls for food essence. I admit, I have no idea what that is or how it would make a difference without it. I’m just going to try it using guava pulp, sweetner, cause I’m diabetic, water and lemon juice. I’m waiting on guavas. My friend has a tree and just called to ask if I still want guava.
By removing the seeds you are actually removing the natural pectin. Just saying, nothing wrong with your method. Infact when I first read it, I thought wow, what a great idea!! But...Maybe i'm wrong and will try both methods to see. Cheers.

Just not spreadable. Third batch in right and going to stop as soon as I see solids. Fingers crossed. It’s worse when too runny!

But what I know jam is supposed to have some fruits in it like you know strawberry jam with some strawberries still in there but this is more of the juice and pulp of the guava that's why I called it jelly. As I said, I have to dig more on it.
It is normal that it will take awhile to reduce because from totally liquid, it will turn into solid and that can't happen in just 15 minutes. If you like next time try adding pectin, it might help with solidifying faster than normal.
Followed every step carefully but the result is not the same. It doesn't look like jelly more like jam. Guava juice is the main ingredient. May be nectar would be better.

You have to put sugar, sweeters don't gel up. You can lessen the sugar to your taste.
