    food is not talked about enough so I created this series discussing the culinary traditions of Lao foodways, exploring the intersection of culture and history through each traditional dish. Part 2 takes a look at the national dish of Laos, laab and FYI it’s not called larb. Originating in Laos, laab has been documented by Phia Sing, the late chef of the Royal Palace. Laab is a dish with aromatic flavors, featuring several signature Lao ingredients such as galangal, roasted sticky rice powder, and padaek. It holds great cultural significance, as it is traditionally prepared during important ceremonies to symbolize luck and prosperity. Laab is especially important in the baci ceremony, a centuries-old Lao tradition that brings the community together to call back the souls, aligning the body and mind. The baci ceremony is held during significant life events such as births, marriages, deaths, and the welcoming of guests. Typically, laab is eaten after the ceremony, enhancing the moment's auspiciousness. It is enjoyed with sticky rice and accompanied by a soup made from the bones of the protein used in the dish. The baci ceremony and laab are interconnected pillars of Lao culture.

      Glad to see this. We see you are spelling it without an 'r'. Any idea why most restaurants seem to spell it "larb" ?? Was that a typographical error, or because it's pronounced differently some places?

      Is Lao food considered the same as Esan Thai food? Or is there a regional difference? (not trying to be disrespectful, I just was told larb was Esan food)

    Tbh I'm happy that this series exists because the only thing I knew about Laos before this series was when America bommed Laos every five minutes for seven years for the reason of "containment"

    The Laotian food that I have eaten was delish. Wish that I could find a recipe for their black hot sauce. Maybe a nice Laotian can post a video on how to make it.

    'It's not called larb' PERIOD
    I lived in Thailand for years and was not a fan of the transcription system for English. 'Larb. Ajarn' GURL BYE THERE IS NO 'R' SOUND IN PRONUNCIATION OR WRITING. I saw it in Isaan, too (I lived the majority of those years in villages that traced their ancestry back to Laos, I even have handmade silk sarong that have traditional color patterns) - if there is so 'r' it really should be removed. It's odd to see locals look at foreigners strange when they pronounce that 'r' lol. I'm so glad I learned how to read and write Thai and Lao.

      Well u are correct regarding “larb” in terms of both written and spoken form, as it does not have any “r” sound or letter. But while “ajarn” doesn’t have “r” in its pronunciation, it does have “r” in written form. The Sanskrit “acarya” is the root word of “ajarn” or “ajahn” or “ajan. It does have “ร“ in it.

    Oh my gosh my best friends when I was growing up were Hmong & I used to be able to eat delicious Lao food!!!!
    I sooooo miss them 😢 and the food 🤤

    i was a picky kid so i never ate much traditional lao food growing up whenever i went to events with my maternal family members.... maybe the food in your videos just looks much more appetizing but i want to try them

    Lao american here, im not exactly the best source but my parents are directly from the country, and while ive seen laab like yours, the one ive seen the most are the ones with the meat more minced, still, good eats regardless.

      Both words are usually the same. The main difference is when you are talking about laab from laos. Or laab from Thailand. I prefer spelling it laab because it’s always mispronounced when it’s spelled larb cause there’s no hard r sound. Laab is the national dish of laos and it’s usually more funky spicy and always eaten with sticky rice. I have the written recipe on my website. Please check it out. Www.saengskitchen.com

    I love laab so much! i like making a big batch and eating it cold during the summer lol. I use ground turkey and laab seasoning i find in asian grocery store LOL

    I spent 1 month in Laos in 2013 with a program. Highly underrated food and culture. The people were sooo friendly and beautiful with the biggest smiles. I stayed for 2 weeks with a family on an island on the Mekong river, and my homestay family was so welcoming. I was not expecting them to be so easy to get along with considering the language barrier. I taught English to my homestay father - he was teaching himself. Such a friendly man. He was missing multiple fingers on 1 hand which he explained was due to a small unexploded bomb from the war. My homestay grandmother was also so lovely, and cooked huge delicious meals just for me to eat... I remember she cried when I left. Some of the most profound couple weeks of my life.

      Lao is the culture. Laos is the country. Laotian is the people

      Laotian is an exonym given by the French, where as Lao is the endonym used in the Loa language which refers to the people, the culture, and the country itself.
      While the two terms are used interchangeably in English, it is more polite and technically correct to use a group’s endonym.

    Here's the thing.. I've lived in thailand since the 90's and what you call Lao food is what thai people call daily staple. The food you cook? Yeah, they eat that every day. I can throw a stick in any direction and walk a few steps and I'll bump into a shop that sells som tum, larb, sticky rice and various grilled meats. It's amazing how Lao food has become a staple food in this country.

      Do you know the history of northern Thailand isaan?it used to be part of laos until the French gave it over to Thailand hence millions of lao people being in Thailand including the culture and food. Because of thaification, the lao people were not allowed to call themselves Lao hence isaan was created. With time, the area has evolved but a lot of the food and culture has stayed the similar to its Lao roots and influence.

      @SaengsKitchen I think it's funny how Esaan people aren't a minority in this country, they've got to be the majority. I swear by all that is holy, almost every person I ask for their roots always say they come from that region. Very rarely do I bump into a full blooded thai from central Thailand. Of course, I do meet the northern and southern thai every now and then but Esaan has to be the majority.

    i know they dont do anything laotion in king of the hill, but i learned about the country of laos from that show. it is a land locked state with alot of history of war and new leadership. but also one of the most resilient cultures ive ever heard about. its been around as long as some of our oldest dynastys , just flowing with the change of time. i would love if this channel gave us not only info on laos food but learning about the ceremonies you brought up would be amazing. like , some people would love to participate in these festivals but a cultural barrier makes it a little hard to get into ya know. i know id be a little lost. i think teaching people HOW to participate in culture is really cool. cooking is fun but what could people do to participate in lao culture in other ways ? (google is fine , but we all know human interactions are how these things should be learned)
