    Oil down is a Caribbean stew that contains salted meat, dumplings, and fresh vegetables in a coconut milk broth with lots of herbs and spices. Chicken wings, pig tails, breadfruit, okra, carrots, green sauce, pumpkin, spinach, and green bananas are among the most popular ingredients used. It’s a flavor bomb in your mouth!

    TRUE BLUE BAY BOUTIQUE HOTEL: At my hotel, I got to see how they make oil down. Our cook prepared all of the ingredients (breadfruit, lemon juice, green bananas, chicken, saltfish, peppers, onions, carrots, green onions, squash, greens, cauliflower, dumplings, and coconut milk with saffron) and put them in a huge pot. He let them cook for 45 minutes and we had oil down! I also enjoyed a beer in paradise, went for a swim, and took a quick tour of the property!

    Correction:Grenada doesn't grow or has saffron. Tumeric is what Grenadians often call saffron;however, the latter is a different spice.
    Tumeric is not saffron!!;

    In Barbados we cut closer to the heart of the breadfruit to get more of the meat. But this looks delicious though 🤗

    Place is really so peaceful...natural surroundings....and I liked that you assisted the chef ...he knows how to do a good oil down...all the layering of ingredients and most of all saw that you really enjoyed this dish and Nate too .     One interesting thing about Oil Down is that it tastes best as a day old left-over food. Something about letting it sit in the fridge overnight just really brings out the flavors more.

    The place looks lovely. I never knew oil down was the national dish. The love and pride that goes into making it. I never saw it with a mixture of meats and fish. Looks so good.     This food looks sooooo good, I wish I had some right now. I wouldn't eat the strange meats, but the chicken and salt fish looked amazing. This food looked so good, I sure wish I had some right now. Um um um. Yum yummy yum !

Do best pelau, roti, pepper pot, black sausage, conchs, west indian/Caribbean chicken soup, goat water/mannish water, ox tails, steamed fish, rice and peas, stewed chicken, patties, fish water/fish tea, ducana/blue drawers and salt fish, rum cake/fruit cake, chicken foot souse, stewed fish, stewed chicken, ...........😊😁😊😁😊😁🤭😆☺️😊😁👍

    Hey David. Happy Saturday. Oil down is something I’ve never heard of til you. Have had individual ingredients such as Callaloo which I love. Could never acquire a test for breadfruit. Lots of provisions. Well seasoned chicken. 🧅🥕cabbage , salt fish, cauliflower, squash, sweet peppers, saffron 🥥🥛, dumplings my fav. Can already taste and smell it. 😋. Compact pot. Wow. You roll the dumplings well David. The finished product looks amazing. Wow. You went for seconds and the pot is almost empty. David I was thinking the same. Want rice or naan. Or even Roti for me. Nice villa. The bathroom is huge. Oh. Look at upstairs. Kitchen, living room, pool. Nice. This is what we like. To try the native island food cooked by islanders. Not bougie restaurants.     I am a born Trinidadian with Grenadian roots. My dad was from Grenada. He died 2 years ago. I miss his Oil Downs every January he used to make for us on his birthday.

    Happy Saturday David. That oildown looked so delicious and I would say, to a point, a healthy dish with all those veggies, chicken, salted fish (I would have put the salted fish in it about 15 minutes before it's finished cooking so that it doesn't dissolve and that way you would get chunks of it). The green figs and dasheen leaves so rich in iron. Did you notice that the lemon on the islands is different to what we get in North America, and washing the green fig and breadfruit with the lemon stops them from oxidizing because they are also rich in iron. Love your dumplings, called 'spinners' in Jamaica. That resort is beautiful, from the villa, to the beach, the pool and just the surroundings alone seemed like such a calm and relaxing place. You and Nathan couldn't have picked a nicer place to stay. The islands, oh the islands, take me away 🤗. Well done. Can't wait to see the next video. 🙏✌️💕🇹🇹🇨🇦

    If you don't have salt fish, u can use talapia& Old Bay Seasoning to uncorked the fish taste. But believe belize, it's not the same as the chef we just witnessed😂😂 I tried mi best to keep up with him, he's very swift& knowledge of "Oil Down" something you can't do bi watching. learn over night; this takes YEARS of skillz😂😂.     Oil Down is dish that goes back to the plantation days( slavery) my grand parent use to make it for cook out, it was made mainly a mix of vegables and left over meats with wild meat, the main things are breadfruit, pork/ham/chicken/coconut water and dumplings with wild of spicies etc, all cooked to make of stew, This was food for working people with plenty vegatables and some meats/fish for flavouring

    Very different from trini oil down ! Would love to try it one day.❤ but we dont produce actual saffron strands from the flowers in the caribbean.. its Tumeric but its labelled as saffron powder because of the colour.

      It is Grenadians who took their culture to Trinidad so basically it is a Grenadian dish.

      I believe what’s made in Trinidad is actually called run down and metemgee. I’m assuming since Grenada and Trinidad are so close and a lot of Trinidadians have Grenadian relatives the name oil down stuck. Both are delicious meals though.

      Plus trinidadians do not Grenadians relatives. It was Grenadians who went to Trinidad after www to built this country. Before them were Creoles the indigenous people aka Taino Arawak. And then escaped slaves from Haiti who were Creoles themselves and from other Caribbean islands when the British fought the French in the 1700 for the islands.
      So when you hear Negroes they came from Grenada after wwww. When you hear maroons and black Caribs they came from Jamaica and St Vincent and other islands and Creoles are basically the inhabitants and slaves who fled with their masters during British invasion.

    This looks like a wonderful tasty Carribean dish, with a lot of great cultural island ingredients salt fish, chicken, bread fruit, green bananas, dumplings, onions, peppers, etc.etc. I think the name of the dish should be changed to "Carabou, Coconut milk boil down dish". This way everyone can understand that oil down is a very wonderful combination of Caribbean Cultural ingredients.

    Hello !! please know that the "callaloo" leaves and stem is "not" the same as the yardi calaloo aka (spiach) its Taro leaves or as we say in the lower carribean Dasheen bush...I love that you big up Trini for the place you loved breadfruit 👍👊

      You can put whatever you like? I just put breadfruit and dumplings, chicken and codfish or smoke herring. I don't put any vegetables in it.

      In Caribbean countries men are very involved in the cooking of large meals. Caribbean men can cook so well!

      In Grenada, oildown is traditionally cooked by the men, and as this is a video on oildown, it stands to reason that it features men!
