That soup looks good, Christine! I'm not so sure how the men in our house would feel about it, either, but it could be a good one for a meatless Friday night supper! Portobello mushrooms have a very meaty texture, so that should make up for the lack of meat in it. I'm going to have to give it a try. ;)
