Cooking With Mrs. Nguyen: Bun Bo Hue (spicy lemongrass beef noodle soup)

  • Hi everyone! Sorry for the delay in my new video. Thank you for your patience!
    In this episode I show you how to make Bun Bo Hue. This process is a little long and tricky. See full recipe and instructions below as well:
    Ingredients:
    scallions
    cilantro
    Thai Basil
    1 pepper
    1 yellow onion
    5 sticks of lemongrass
    1 banana flower
    1 bag of bean sprouts
    1 packet of "Bun Bo Hue" powder
    1 lime
    1 bag of vermicelli noodles
    1 pork blood cake
    1 bag of pork bones
    2 pieces of beef shank
    8 pigs feet
    1 piece of rock sugar
    some annatto seeds
    olive oil or vegetable oil
    dried red pepper flakes
    fish sauce
    sea salt & sugar
    Process:
    1) Slice the beef shank. Marinate with 1 tablespoon of Bun Bo Hue powder, 1 tablespoon salt, 1 tablespoon sugar. Drizzle olive oil. Mix up. Marinate it for several hours or half day.
    2) Bring a pot of water to boil. Add 3 tablespoons of salt. Drop the pork bones and pig feet in and stir for 10 seconds then remove. This is to clean them. Toss the water.
    3) Bring another pot of water to boil. This is the soup pot. Add the pork bones and pig feet.
    4) Smash 3 sticks of lemongrass and tie together as seen in video. Drop in the pot. Let it cook for 1 hour and 15 minutes.
    5) Chop the other 2 sticks of lemongrass into 1 inch pieces. Add to sliced beef shank.
    6) 20 minutes in to the bones cooking, scoop out the foam consistently and toss. Season the broth with 2 soup spoons of fish sauce.
    7) Clean all the vegetables and herbs with cool water and salt. Let dry.
    8) Bring another small pot of water to boil to clean the pork blood cake.
    9) Cut the pork blood cake into small pieces.
    10) At boiling point, throw pork blood cake into water and cook for 1 minute. This is to kill any bacteria.
    11) Rinse pork blood cake well.
    12) Bring another pot of water to boil. Add vermicelli noodles and cook for 11 minutes.
    13) Rinse the noodles in cold water to keep it clear. Then run it under warm water to keep it soft. Drain water.
    14) 1 hour and 15 minutes later, take out pork bones and pig feet. Toss the pork bones. Keep the pig feet for eating. But we don't leave it in the pot. If we do, they get mushy.
    15) In a separate pot, add some oil and sautee the beef shank for 3-4 minutes.
    16) Add the beef shank and pork blood cake into the pot of soup. Add more hot water as needed. Remove foam as needed. Season again with sea salt and fish sauce. Do spoon by spoon, taste, and adjust. Total cook time from this point is 35 minutes for the shank.
    17) To make the food coloring, add oil to a small pot (half an inch deep), add 2 soup spoons of annatto seeds. Simmer for 5 minutes. Then strain. Toss the seeds.
    18) 15 minutes from adding beef shank, add pepper, dried red pepper flakes, and 1 nugget of rock sugar.
    19) 25 minutes from adding beef shank, add the scallion roots and 3 soup spoons of food coloring oil
    20) 35 minutes from adding beef shank, turn the stove off.
    21) Before serving, throw 1 or 2 pig feet into the hot pot to heat it up. But don't keep them all in the pot because then they'll get mushy.
    22) Add noodles, soup, meat, scallions, cilantro, and onions together in a bowl. Thai basil, bean sprouts, banana flower, and lime served on the side.
    23) Enjoy!

    Thank you, this was wonderful. I know exactly where to pick up the same spices you used. My ex-wife's mother taught me how to cook pho ga from scratch. This video gave me many fond memories of my time with her family. I am still not a big fish sauce eater but love chili. I used a milder fish sauce and fresh sweet thai basil. It was delicious. I asked my butcher for beef tendon but he just gave me a strange look. I can't wait to try your other recipes.

    I have been living in Saigon for 8.5 years now and love to eat this dish once in a while. I used to eat it nearly daily, until I got a bit burnt out :D Best place to eat this in Saigon by the way, is the Bun Bo Hue street restaurant opposite coopmart in Cong Quynh ;)
    Anyway, I loved your video chi Nguyen! It's very authentic and the results after copying you were perfect :)

      Hello Icall300, this is Mrs. Nguyen.
      You can make fish sauce
      with boiled water and boiled sugar and let it cool down and also add chopped garlic and chili pepper with lime, fish sauce then taste and decide how much fish sauce you need to add.
