I loved everything you said about steel and the different efficiencies of push-cutting versus slice-cutting. As someone with many years experience handling blades on all sorts of edged devices I'm quite comfortable cleaning the lather off of the blade in the way you do, but in those years I have also experienced the universe of ways in which I can cut myself. For the uninitiated, who want to follow your lead, you might want to explain how to do that safely :) Again, great work!
